Remember all those groceries I bought at Aldi last weekend? Well, those groceries eventually became meals and those meals were pretty delicious. What were those meals? Well, I’m glad you asked. Here are a couple of recipes from the week.
Asparagus, Ham, and Pesto
This recipe is an adapted version of Aldi’s recipe for Asparagus with Mushroom and Ham. The dish was the cover photo for the Aldi’s fresh catalog, which served as my inspiration for dinner that night.
Ingredients:
- 1 tablespoon olive oil
- 4 oz of ham
- 12 ounces Season’s Choice Frozen Asparagus Spears
- 1/2 pint cherry tomatoes
- 1 cup fresh spinach
- 1/4 cup chopped walnuts
- 1 tablespoon pesto
Start by cutting the asparagus and cherry tomatoes in half. Chop ham in bite size pieces.
In a medium pan, heat 1 tablespoon of olive oil. Add asparagus, ham, and tomatoes. Cook for a few minutes before adding spinach, walnuts, and pesto. Continue cooking until spinach is wilted and everything is hot.
Derek and I had this for dinner last Sunday. We were both craving some greens after a pretty indulgent brunch and this definitely hit the spot. The pesto gave a lot of every flavor and the walnuts gave a nice crunch.
Stuffed Mushroom Caps
- 1 red pepper
- 1 garlic clove
- 2 Fit & Active Sweet Italian Sausages
- 1 cup tomato sauce
- 1 cup spinach
- 2 portobello mushroom caps
- 1/2 cup parmesan cheese
Preheat oven to 350.
Start by chopping the red pepper and garlic clove. Add to a hot pan over medium heat with a little olive oil. Cook until red pepper is soft and garlic is fragrant.
Slice the Italian Sausage down the side and empty into pan.
Cook until sausage is brown. Add spinach.
And tomato sauce.
While the meat is cooking, clean out the mushroom caps and bake for 5 minutes at 350.
Fill each mushroom cap with 1/2 meat mixture and 1/2 parmesan cheese.
Bake at 350 for 10 minutes.
Served with a side of broccoli.
Another delicious combination. This was a very easy weeknight dish to throw together after work. It’s even better with a glass of red wine on the side. 😉
