Two Easy Dinners

by Meghann on February 25, 2014

Happy Tuesday!

Remember all those groceries I bought at Aldi last weekend? Well, those groceries eventually became meals and those meals were pretty delicious. What were those meals? Well, I’m glad you asked. Here are a couple of recipes from the week.

Asparagus, Ham, and Pesto

This recipe is an adapted version of Aldi’s recipe for Asparagus with Mushroom and Ham. The dish was the cover photo for the Aldi’s fresh catalog, which served as my inspiration for dinner that night.

  • 1 tablespoon olive oil
  • 4 oz of ham
  • 12 ounces Season’s Choice Frozen Asparagus Spears
  • 1/2 pint cherry tomatoes
  • 1 cup fresh spinach
  • 1/4 cup chopped walnuts
  • 1 tablespoon pesto

Start by cutting the asparagus and cherry tomatoes in half. Chop ham in bite size pieces.

In a medium pan, heat 1 tablespoon of olive oil. Add asparagus, ham, and tomatoes. Cook for a few minutes before adding spinach, walnuts, and pesto. Continue cooking until spinach is wilted and everything is hot.

Derek and I had this for dinner last Sunday. We were both craving some greens after a pretty indulgent brunch and this definitely hit the spot. The pesto gave a lot of every flavor and the walnuts gave a nice crunch.

Stuffed Mushroom Caps

  • 1 red pepper
  • 1 garlic clove
  • 2 Fit & Active Sweet Italian Sausages
  • 1 cup tomato sauce
  • 1 cup spinach
  • 2 portobello mushroom caps
  • 1/2 cup parmesan cheese

Preheat oven to 350.

Start by chopping the red pepper and garlic clove. Add to a hot pan over medium heat with a little olive oil. Cook until red pepper is soft and garlic is fragrant.

Slice the Italian Sausage down the side and empty into pan.

Cook until sausage is brown. Add spinach.

And tomato sauce.

While the meat is cooking, clean out the mushroom caps and bake for 5 minutes at 350.

Fill each mushroom cap with 1/2 meat mixture and 1/2 parmesan cheese.

Bake at 350 for 10 minutes.

Served with a side of broccoli.

Another delicious combination. This was a very easy weeknight dish to throw together after work. It’s even better with a glass of red wine on the side. 😉

This post is sponsored by Aldi. As always, all opinions are my own.

2014 Gasparilla Half Marathon

February 23, 2014

arrrghhh… I ran for the booty at the Gasparilla Half Marathon this morning. Yep. Coolest medal of all time. Makes that whole running 13.1 miles thing totally worth it, right? The Gasparilla Distance Classic is a Tampa tradition. It’s a full weekend of events, starting with a 15k and 5K on Saturday and the half more »

Socks and Purses

HAPPY FRIDAY!!!! That’s Maddie’s I’m-so-happy-it’s-Friday face.  That’s also her I-just-ran-3.5-miles-and-I-have-energy-to-spare face. I signed both of us for a dog-friendly 5k at the end of next month. I’m not sure if there are any official prizes for being the first dog across the finish line, but if there are, Maddie has this one in the bag. more »

Return to XP

February 19, 2014

So I’ve been a bad training buddy lately. Basically I’ve attended ZERO team workouts in 2014. Last year I saw my XP teammates daily, but just as I decided to take a break from triathlon training (hey, that Ironman took it out of me!), my friends decided to do something crazy… Like sign up for more »

A Sunday Shopping Trip At Aldi

February 17, 2014

You may already know this, but I’m a self proclaimed grocery store nerd. I get it from my Dad. He loves food as much as I do and grocery stores equally as much. I’ll never forget the time we stopped at a grocery store in Italy just to see what it was like (only my more »

Worth the Drive Part II

February 15, 2014

Brrr… it’s a cold and windy day in Tampa Bay today. Well, not cold… let’s say “chilly.” I know, I know, it’s been a cold and snowy week for the majority of the rest of the country, but that wind can be brutal if you’re not dressed for it! #FloridaGirlProblems I met a running group more »
