What I’ve Been Eating

I know. I owe you guys a race report. I promise I’m working on it. This may be the first race report in Meals and Miles history where I’m waiting for the official photos to write the full report. The truth is that I’m not sure I can tell the full story without them. There were photographers on all the “right” spots along the course and I’m crossing my fingers they caught a couple of good shots. If they did, I bet my mouth is wide open in complete awe of how close we were to the vehicle assembly building or launch pads – the course was that cool.

The race director just sent an email promising photos by Wednesday. My fingers are crossed will have them before then!

In the mean time, here’s a little look at what I’ve been eating lately:

I’ve sorted of fallen out of the habit of taking photos of everything I eat (even after 4 years of constant food-photo taking, it’s crazy how easy that habit was to drop), but I have captured a few things lately.

Like this crazy delicious lunch I had last week.


Featuring a baked sweet potato stuffed with deli chicken and swiss cheese (reheated in the office kitchen microwave). So, so, so good!


I made this random concoction for dinner last night.


I know, it’s not pretty, but it was good. Roasted vegetables topped with two runny eggs, goat cheese, and roast beef. So much flavor right there!

Here’s a homemade turkey burger from Thursday.


And my dinner from Panera Bread on Friday.


The new thai chicken salad gets two thumbs up from me!

I had a free drink reward for Starbucks that I’d been saving for after my race on Sunday. Lucky for me, I accidentally stumbled upon Starbucks happy hour for half off Frappuccinos. Since my drink was only $2, I ended up saving the free reward for another, pricier Starbucks adventure.


The promotion is 3-5 everyday until May 12th. AND the new Mocha Cookie Cumble flavor is back. It comes with CHOCOLATE whipped cream covered in cookie crumbles, do I really need to say more? πŸ˜‰

Luna sent me their new Carrot Cake Luna bar to try last week.

I loved the rich spices present in the bar. It definitely had a carrot cake bite to it. I’d eat it again.

Tried any good recipes lately? I’m always looking for good ones!

I love taking food pics! Especially when I know I really put my foot in a dish…yesterday I was at a Japanese restaurant called Kabuki and they had the BEST spicy tuna salad ever. I have to find a way to replicate it at home. I really wanna try your chicken cheese sweet potato…it sounds yum!

Haven’t had a Luna bar in ages, but the carrot cake one looks good! No new recipes here, but one of my go-to recipes is a bag of boneless skinless chicken breasts thrown in a crockpot with a can of rotel and a package of taco seasoning. It literally falls apart after being on low all day. We either eat it on a tostada or wrap it up like a soft taco.

Yeahhhh so this post totally just reminded me that I left a sweet potato in the microwave last night. I was cooking it to have with my lunch today… and I’m pretty sure it’s still sitting there now. FAIL lol!

Anyway, looks like lots of tasty eats! I was taking pictures of everything I ate for the entire month of April and I don’t miss it one bit! I love sitting down to a meal and not worrying if I “got the shot” πŸ™‚

That Mocha cookie crumble from SB looks and sounds delicious! I’m not a huge bar eater, but I tend to choose flavors like carrot cake, anything with spice… or chocolate of course πŸ™‚ Can’t wait to read your recap!

That sweet potato looks yummy! The other night for dinner I took brown rice pasta, chicken and spinach and made a really good pasta dish. I added a sprinkle of parmesan cheese at the end. It was GOOD!

I love Luna Bars and I’m on the look out for that new flavor. I’m in love with all of Skinnytaste’s recipes, and I tried her Cheesy Jalapeno Stuffed Chicken last week. Oh my gosh!! So good! It tasted just like a jalapeno popper!

I love carrot cake and I love luna bars…so I will probably love their new bar.

I actually have plans to head out to Starbucks this afternoon with some coworkers. I got a gift card for my birthday, but I’m so stingy I never use them..but half off???…sounds like a perfect way to splurge!

I think I’m late to the Luna bar party, but I’ve been LOVING them all of a sudden for an afternoon snack! I just ate a Peanut Honey Pretzel one actually. lol Can’t wait to try the Carrot Cake!

I almost exclusively eat sweet potatoes in the form of baked ‘fries,’ but that stuffed sweet potato looks delicious! The best recipe I’ve made recently is Rachael Ray’s Drunken risotto. Ohmygoshsogood, with or without the sausage.

I make so many meals that look awful but taste wonderful, but I’m too embarrassed of how terrible they look to photograph them and put them on my blog because unfortunately we haven’t figured out how to send tastes through the Internets. I am loving Frappuccino happy hour and I will be very sad on May 13th when I can’t get my afternoon 1/2 price drink. Looking forward to reading the race recap!
