Filipino Pulled Pork

Mmm…. filipino pork!

And, with Mary’s permission, I have the recipe to share!

Filipino Pork

This is a recipe that Brian’s mom told me how to make once, I think I’ve also seen something pretty much the same on Skinny Taste (funny Brian’s mom has been making this forever and ever). As with most things I cook…The measurements are not exact, they are more – so a guideline. I always end up using more water / vinegar / soy in equal amounts to cover the pork. One time I exploded the crock pot top by not putting enough liquid on the pork first when I made this…

What you need :

  • 1-2 lbs pork loin
  • 1/3 cup soy sauce
  • 1/3 cup apple cider vinegar
  • 1/2 cup water
  • 5-6 cloves of garlic, crushed
  • 2-3 bay leaves
  • Black pepper / Adobo seasoning to season the meat.

What you need to do :

Put the pork loin in the crock pot (duh 😉 )

Mix together your vinegar, water, and soy sauce, pour over the meat. make sure that it just covers the top of the meat.

Place your crushed garlic/ bay leaves around the meat evenly

Cook on low for 8 hours. (I usually do this for 12 while I’m working all day)

Enjoy! You can serve over rice (the Filipino way) or you can eat it on a bun, or just plain with some veggies on the side.

I also added onion to the recipe. After 8 hours of cooking, the pork was juicy and flavorful, and the sauce wasn’t terribly overpowering. Both Derek and I devoured our plates, then went back for seconds. Yum.

The pork was served atop cauliflower rice, a Pinterest recipe I’d been meaning to try.

I’m not much of a rice fan, so the fact that the cauliflower “rice” didn’t really taste like rice was a turn on to me. It was easy enough to make and went really well with the pork. I also added some green beans and avocado to my plate.

Derek andI finally tracked down some local Girl Scouts selling cookies at Publix on Sunday. It wouldn’t be February without at least one box of Girl Scout cookies in the house!
