Still Open

by Meghann on February 7, 2013

I had some errands to run on the other side town of this afternoon. I brought my swimsuit, goggles, and towel with the plan of arriving early at swim practice for once. Unfortunately rain was moving in on Tampa and the radar didn’t look good.

There was some confusion among my team on whether the pool was open or not. A teammate that was just at the pool said they were, while our coach, who called the pool to check, said they weren’t. Since it wasn’t lightening or thundering (and I was right down the road) I decided to risk it and check in person.

Turns out the confusion didn’t stop at my team, the staff at the pool was confused, too. The front desk told me the pool was currently closed, but would open in five minutes. After I changed and went outside, the lifeguard said they never were closed and wasn’t sure where I got my information from. Confusion. Everywhere.

The good news was the pool was open, unfortunately my coach had already cancelled practice and no one from my team was coming. Bummer. I was tempted to just turn around and go home, but decided to stick it out and get a much needed swim in. I missed practice on Tuesday and knew I needed to get my head wet at least once this week. Game on.

Coach had sent a workout, but it was one my phone and I forgot it almost as soon as I got in the water. oops.

I sort of made it up as I went along and came up with this beauty:

  • 300 warm-up
  • 10 x 50 @ 1:00
  • 100 easy
  • 8 x 25 hard
  • 100 breast
  • 200 free
  • 100 cool down
  • Total: 1500 yds

I forgot how boring it is to swim on your own. I missed my teammates! They make swimming more fun. Still, it was a good swim and I’m a glad I didn’t turn around and go home. 🙂

For dinner, I found this recipe for Chinese-Style Turkey Meatballs.

Only, I made a few changes:

  • swapped out the green onion for poblano pepper
  • added two tablespoons of apricot preserves
  • sprinkled sesame seeds into the mix
  • my “sauce” only consisted of soy sauce and apricot preserves

I was really impressed with this recipe. The meatballs were quick and easy to make and they tasted great too.

I was also happy with the addition of the apricot preserves. I love adding apricot preserves to my stir fry dishes for a touch of sweetness and that sweet flavor translated nicely into the meatballs.

This dish might become a regular around here. 🙂

Good Night!

Eggplant Chicken Salad

February 7, 2013

I think I found a way to make last night’s eggplant dip look a tad more appealing for the camera – turn it into a chicken salad sandwich. Ta da! It’s a little better, no? I had leftover chicken breast and eggplant dip in the fridge. What better way to take advantage of the leftovers more »
