Fig and Rosemary Pork

Derek and I had a little fun in the kitchen tonight.


I stopped at Publix on the way to swim practice yesterday and picked up this little baby in the Apron’s Meal section.


Loved the concept. Loved the gist of the ingredients listed. But I thought I would put my own little spin on the recipe.


Here’s what I came up with (based on what I had in my fridge):


  • 1 lb lean pork
  • 1 tablespoon fresh rosemary leaves, finely chopped
  • 2 tablespoons olive oil
  • 1/2 red onion, thinly sliced
  • 1 cup baby portobello mushrooms, sliced
  • 1/2 cup chicken broth
  • 10 small figs, quartered
  • salt and pepper

Preheat the oven to 375.

Rub the pork with the olive oil, rosemary, salt, and pepper. Set aside and allow to marinate for 5-10 minutes.

Start the onions in in a large oven-safe pan on medium heat. Once the onions are soft, add the mushrooms and figs, season with salt and pepper. cook for 2-3 minutes before adding the pork. Allow the pork to brown for a couple of minutes per side. Cover the pork with the chicken broth and move the pan from the stove top to the oven to roast.

Pork should cook for 20 minutes, or until the internal temp reaches 145.


Really, the main difference between my version and Publix’s original recipe is the fact that I cooked the fig sauce with the pork, instead of separately. That way the sauce really had time to give the pork a little extra figgy flavor.

Of course, after everything was all said and done, I noticed Derek just took a plate of pork, without adding any of the extra sauce to his plate. I asked him what was up and he told me he didn’t like figs (which is weird since he was the one who chopped them for the dish!). He told me it wasn’t a big deal and was happy with the pork sans the sauce (he even went back for seconds and commented on how delicious the pork was). So if you have an eater in the house who doesn’t like figs – don’t worry – they’ll still enjoy it!


I dug a Dancing Deer Fruit and Nut Bar out of the freezer. Just a 30 second zap in the microwave and it was just as tasty as ever. 😉


Also, totally okay with Derek not liking figs – more for me. 😉
