Easy Stuffed Chicken Breast Cutlets

If you were to ask what my top 5 favorites dishes to make were, I’d say stuffed chicken would be near the top.


They’re easy, tasty, and hard to mess up. Let’s take tonight’s meal for example…


  • 4 chicken breast cutlets
  • goat cheese
  • shredded mozzarella cheese
  • basil
  • balsamic vinegar
  • olive oil
  • salt and pepper

I mixed the goat cheese, mozzarella cheese, basil, balsamic vinegar, and evoo in a small mixing bowl, then added a tablespoon of the cheese mix to each of the pre-seasoned chicken cutlets (just a sprinkle of salt and pepper on both sides), then folded the cutlets over.

The stuffed cutlets baked at 375 for 20 minutes.


Served over a bed of wilted spinach.


I like using cutlets because they’re a little easier to work with than full size breasts. They’re nice and thin so you just have to fold it over.

While the chicken baked I peeled two sweet potatoes, steamed them, and made mashed sweet potatoes with a little milk.


The whole meal took maybe 30 minutes from start to finish. See – easy, tasty, done. All you need is a little cheese and chicken and your good to go. Even better, you can personalize each breast per individual by adding tomatoes, ham, olives, or whatever your heart’s desire is craving.


I had some peaches slices with peanut butter as a mid-afternoon snack.


And an orange cranberry cookie (from Publix) for dessert.


My first orange cookie. Was a little surprised by how strong the orange flavor was, but didn’t mind it. The oats and cranberry balanced it all nicely.

Can you believe tomorrow is the last day of July? The summer is slipping by. Pretty soon it will be August and my next crazy month of traveling will begin. I have two conference and two baby showers to attend before we suddenly find ourselves in September. Gulp. It’s not even August yet and I can tell it’s going to go quickly.

Alright. Time for more Olympics. I’m suddenly a huge Missy Franklin fan. How can you not love her story? A 17-year old who chose to stay and train in Colorado because she didn’t want to leave her friends and family? This is what the Olympics are all about!

Yummm def going to try that soon! I’ve been on a whole lentils and veggies with this amazing Trader Joe’s BBQ sauce thing lately but its probably time to switch it up.

Ps. totally excited for September because thats my birthday month <– yup 'month'…although I give my mom a few days at the end for her birthday ๐Ÿ˜‰

Its hard to believe Missy Franklin is just 17 when watching her swim. She seems so in tune with her body which is so exceptional for someone that age. However, you can definitely tell her age when she interviews and I think thats awesome. Shes adorable!

I’ve never made stuffed chicken before but I might have to try it! I guess I just get anxiety over cooking meat! Haha I eat lots of eggs…

I also love Missy Franklin! And after her Gold and Nick’s silver yesterday the 100 back is quickly becoming my favorite event! You should have seen my coworkers and I all piled into one office to watch the race on the UK feed!
