Just Like Mom Used to Make

My mom hates to cook.

Ok, that’s a lie.

She just doesn’t prefer it.

My dad was always the cook in the family and my mom never stood in his way. More power to him – right, Mom? πŸ˜‰

However, on the very rare occasion that my mom did pull my dad away from the kitchen, she had a few staple meals that she liked to make and she made them well. She was always the one to prep the lasagna, no holiday is complete without her famous cheeseball, and I’ll always remember the big pots of leek potato soup that always warmed my belly.

It’s been a couple of years since I’ve had leek soup, but when I saw a big bunch of leeks at the store this weekend, I knew I had to try and make a big pot just like mom used to make.

Only mine was a tad different. πŸ˜‰

I started with a base of chopped leeks that I gently sauteed on medium heat for 10 minutes while being very careful to keep them from browning. (browned leeks = burnt leeks)

Then I added one regular potato and one sweet potato (my twist)

And covered it all with 2 cups of vegetable broth and 2 cups of 2% milk (another twist)

I brought everything to a boil, then back to a simmer for 30 minutes. When the potatoes were soft I blended it with my hand blender and seasoned with salt, pepper, and fresh parsley.

I topped my bowl with some cheese and fresh parsley.

The soup was creamy and filling. Each bite warmed my soul. Still not as great as what mom used to make, but I thought I came pretty close. πŸ™‚

For the side, I baked an easy batch of cornbread using the recipe off of the bag of cornmeal. The results were very fluffy and almost cake like.

A piece of Dole Dark Chocolate found its way in my stomach for dessert.

My brother and his fiance brought the adorable pup home this afternoon. He’s a 10-lb 15wk old hypo-allergenic (they’re both allergic) miniature schnauzer. I haven’t even met him yet and I’m already in love. πŸ™‚

And I know Maddie can’t wait to play with him either. πŸ˜‰

That makes a total of 4 grandpuppies for my parents. Can you tell we’re dog people?!

That sounds delicious. Off to change my fruit & veg order now so that I have leek and sweet potato for the weekend … (phew, I thought leeks might have been out of season here in Aus but our farmers are still delivering them so all okay πŸ™‚ )

Your brother’s new puppy is adorable. Our big boy went to puppy pre-school with a mini schnauzer, they’ve got a great personality!

Aw, what a cutie! I joke with my parents (except I’m not really joking) that their only grandkids (at least from me) will be dogs. Lucky them, they get to babysit her for the next 5 days while we head down to Florida. Just what every grandparent wants πŸ™‚

If your family loves dogs so much, why didn’t they adopt a dog?

While it’s true that there’s not really such a thing as a completely hypo-allergenic dog, schnauzers don’t shed, they grow hair continuously much like humans do. And not-shedding helps contain the dander (found on the skin) anyway, so it’s more likely you’d have fewer and less severe reactions.

My mom is the same way. She would rotate between 4 or 5 different dishes every week. I can still taste them, LoL. Spaghetti, Chicken Stir Fry, Tuna Noodle Casserole and Chicken and Rice. All of which usually started with a can of cambells condensed soup.
Your soup looks great! I’ve never cooked with leeks but they sound good.

You know I had to comment on a post with a schnauzer picture in it! They are fantastic dogs. Tell his new mom and dad to raise him with a firm hand — schnauzers can be very bossy and have a mind of their own. Even today I can still practically see Bowser’s thought process: “Hmm, she said to sit, but do I want to? Should I listen?” (He eventually does, but he’s a mischievous little guy.)

And that soup looks good … my mom made potato soup with our leftovers after Thanksgiving, and I’ve been craving it ever since I came back home. I think I might make your recipe this weekend.

That soup looks AMAZING. Definitely need to make some soup this winter. I only did once last year, and it was kind of a fail. I can always try again!

Not to be a jerk but did you know that the hypoallergenic thing is a myth? No dog is actually hypoallergenic (it’s a placebo effect). A recent study found that “hypoallergenic” dogs produce just as much dander as other dogs.

Presley is so adorable! My parents adopted a 5 year old mini schnauzer mix (brought up to MA from Georgia!) and he is such a great dog. Very well-behaved and loves to sit on your lap.
