More Figs

Sixteen miles are done. And done.

IMG_2210.JPG

I’m really starting to enjoy my new weekly meet-ups with Allison for our afternoon ride. The weather is getting cooler in the early evenings and a relaxing sixteen mile mid-week escape is great for a little girl time.

This afternoon I introduced Allison to a new trail and we both discussed our fondness for sweets and citrus (all hail keylimes!). The 16 miles flew by; as did my ability to take a serious photo of myself. ๐Ÿ˜‰

Backing up to earlier… I had a serving of leftover Chickpeas and Dumplings for lunch. (It was on it’s last leg, but still pretty tasty.)

IMG_2205.JPG

And a piece of Lemon-Fig Cake made great pre-cycling fuel. ๐Ÿ˜‰

I was inspired by Mariel on what cook for dinner.

Goat Cheese & Fig Stuffed Chicken. Wowza.

IMG_2221.JPG

I was a teeny bit afraid it wouldn’t turn out, but the combination was wonderful. The fresh figs became soft and mushy and made a a great jam-like consistency with the goat cheese. The mixture would have been great on toast, but really shined in the savory chicken breast.

Derek even enjoyed it! Apparently he doesn’t mind figs if you hide them….or just not tell him their in there. ๐Ÿ˜‰

IMG_2230.JPG

I finished the plate off with the left over quinoa blend from last night and sauteed zucchini and yellow squash.

IMG_2240.JPG

I pulled out the Adora Calcium Dark Chocolates (HLS swag!) for dessert.

IMG_2248.JPG

Confession: I’ve been having one of these every other day as a post lunch treat since we got back from Philly. They’re as good as candy. ๐Ÿ™‚

I can’t believe in a couple of ours it will be September! Man, this summer flew by!

i am soooo ready for fall!! been ready for 2 weeks! bring on the pumpkin, perfect running weather, halloween, and mallomars (kind of random..but they only are available during the colder months.. the chocolate apparently melts in the summer? don’t ask me the logic behind this, as there are so many other chocolate treats in the summer. who knows!)

7 Liz September 1, 2011 at 2:57 am

Bring on the pumpkin! I actually bought my first can of Libby’s last week ๐Ÿ™‚

I always admire your speed on the bike: I’m still crawling along like a tortoise at 12-13mph.

I also adore your facial expressions!

An Adora disc every other day as a post-lunch treat…should I feel bad that I have at least one Adora disc, EVERY day, as an ‘I just happen to still be existing today’ treat!? Theyy’re calcium, they’re good for me ๐Ÿ˜€
You’re so speedy on the bike – do you think it makes a big difference that you have a road bike? I have this weird crappy small mountain bike, and I find 10mph tough on the road!

11 Brittany @ Itty Bits of Balance September 1, 2011 at 5:59 am

I’m eating figs in my cereal for the first time as we speak! I’m very impressed ๐Ÿ˜‰

I love love fall, but I had one of my most favorite summer’s ever so I’m sad to see it go. Awesome job on the bike ride, anytime I can get a friend to join me in a long run is so much more fun then going at it alone!
