Mouth Watering Good

There was nothing healthy about the heavy, crisco fried chicken featured in the movie The Help, but boy was I craving it when I left the theater around lunch time today. The flakey, crispy chicken jumped from the screen and had my mouth watering the entire 2.5 hr film. It looked good.

I wasn’t patient enough to attempt to make any chicken after the movie (a snack plate was quick enough to fit the bill), but I knew I wanted to attempt it for dinner tonight.

It wasn’t the same deep fried chicken from the film, but it was close!


I chopped the chicken in nugget form, soaked the nuggets in left over enchilada sauce (Best. Idea. Ever.), then coated the nuggets with a bread crumb, Garlic Gold (HLS Swag Bag baby!), chili powder, and flax seed mix.



The nuggets were baked at 415 for 15 minutes.


Soaking the chicken in enchilada sauce was amazing. The chicken was very moist and had a spicy, spanish undertone to them.


The deliciousness of the enchilada sauce sort of cancelled out all the other flavors. I really couldn’t taste the Garlic Gold, so I can’t attest to the hype surrounding the spice.

And an english muffin with blackberry jam completed the plate.



I was beyond excited to finally get my hands on a box of New Morning Organic Cinnamon Grahams at Healthy Living Summit this weekend. I can’t find them in my area and have really wanted to try them.

I made the ultimate dessert tonight featuring the graham crackers.


I added a spoonful of ice cream between each graham cracker and Hello graham cracker ice cream sandwiches!


Double yum.

Derek and I are booking our cruise tonight!!! Let’s hope all the hurricanes stay very far away from the Caribbean the second week of October!

Enchilada sauce as a marinade?? so genius. My mouth is watering looking at pictures of your dinner. Who needs regular fried chicken anyway? 😉

You were on a creative roll tonight too with those graham cracker sandwiches– if you added chocolate chips to them you’d get ice cream smores!

When I saw that scene in the movie with the chicken my mouth started watering and I asked my husband (who was born and raised in Mississippi) if he knew how to make it that good and he looked at me with a smile and said “uhhhh yeah. That’s what we do in Mississippi. Fry chicken.”

No. That is not even anywhere near in the realm of southern fried chicken. I am sure it was good but not even close to the real thing.

Definitely not a fried chicken sub – let’s just call this a healthy make believe version. If I want true fried chicken I’ll go visit my Dad 🙂

This is a great idea for baked chicken. I never would have thought of using enchilada sauce. And the dessert idea is killer too!

I need to try the Garlic Gold. I am obsessed with garlic. Your chicken nuggets look amazing. My mom has made a recipe where she soaked hers in hot sauce prior to coating them with panko break crumbs… I’m going to have to try it in the enchilada sauce! Yum!

I would have never thought to coat nuggets in enchilada sauce wow! Red or green? I love making “mock” nuggets by baking. I coat mine in wheat germ for extra folic acid and vitamin e.
