Blog Goes Up…. Blog Goes Down

Oh, boy.

6 hours of blog downtime today.

I think that may be a new record.

Everything should be working now. If you’re reading this, I’ll take it as a good sign that we’re good to go. πŸ˜‰

The blog may have been giving me a headache today, but at least the food was good.

Exhibit A:


This meals screams southern comfort food.

There’s the left over cheesy grits from last night’s dinner


Sauteed Kale


And two eggs over easy.


Garnished with a sprinkle of green onions.


All that was missing was a side of fried chicken and cornbread. πŸ™‚

We’re just over two weeks away from Healthy Living Summit and my mind is going crazy with all the stuff that needs to be done before hand. Today revolved around signing contracts, working on menus, and announcing the cocktail party location.

I needed to get out of the house, so I moved the work party to Starbucks and snacked on an apple on the way.


When dinner time rolled around, I was sort of lost on what to make. We have a fully stocked fridge and pantry, but no plan on what to do with all of it. This is a bad habit of mine – shopping on a whim with no meal plan. Once upon a time I used to do weekly meals plans, maybe I should get back on that.

I mean, there was the standard fallback meal of roasted vegetables with marinara sauce, but I knew I could one up on that. So, I took the concept and just changed it up a bit.

My quick and easy version of stuffed eggplant:


Take one eggplant, cut in half, clean out the middle, and make two eggplant boats. Bake the eggplant boats for 15 minutes at 420 degrees.

Take the eggplant ‘innards’ and sautee on the stove top with carrot, onions, mushrooms, and various seasonings. Add marinara sauce and a couple heaping of spoonfuls of ricotta cheese.

Fill eggplant boats with the ‘innards’ mix. Top with left over cheesy grits and a sprinkle of ground flax seed. Bake for additional 5 minutes at 420 degrees.



After I started eating, I decided to add a piece of toast to the meal. The toast was great for soaking up the yummy juices, plus it the meal felt kind of light without it. πŸ™‚

Derek’s mom brought over half a dozen of Ikea cinnamon rolls last night. I heated up half of one for dessert tonight.


I’ve been tempted by the cinnamon rolls several times while standing in the checkout line at Ikea, but I’ve never had the guts to actually try one. I didn’t know what I was missing out on. After 30 seconds in the microwave this baby was warm, gooey, and oh so cinnamon-y. Love.

I guess the good thing with the blog going down is that anyone that reads you through a reader didn’t notice. Like me! They all showed up for me, so that’s a good thing.
I fear Cinnamon Rolls. I’ve never had Cinnabon but I hear it’s like dancing with angels on fluffy clouds. I avoided Nutella for years because I just knew I would like it TOO much. This is why I also avoid Cinnamon Rolls. πŸ™‚

I say YES to cheese grits — they’re one of my favorite foods. I miss them, not living in the southeast anymore =(

I never knew the difference. My Dad just always called any egg with a runny yolk eggs over easy, so I’ve always thought of it that way too. Since that’s how it has been in my head since childhood, it will probably stay that way. πŸ™‚

I didn’t even know there were options other than scrambled (and maybe sunny-side up?) until I started working at Village Inn out Capital Circle (right where it hits the Thomasville flyover,) so you are definitely not alone!

Then I had to memorize all the ways you can cook an egg and it went downhill from there… πŸ˜‰

Everyone seemed to be having blog issues yesterday. Glad it’s back up and running.
I’ve been using Daily Mile for a few months now. I need to be more active on it though. I just use it now to track my mileage but I don’t really use it for all its worth.

Well, at least it was worth the wait (especially the announcement of the Reading Terminal Market for Cocktail partyyyyy!!)

And what goes up… must come down. Like my hunger level was down…. then I read about those eggplant boats, so now it’s up…. I’m sure it’ll be back down after lunch (hopefully, there are even some roasted eggplants in that!)

I am so excited for HLS! and in central PA we call Cinnamon Rolls Sticky Buns and let me tell you, you must try one in Philly. If you can find one at a local market from lancaster county they will not dissapoint! sooo yummy, warmed up, topped with raisins, and a glass of milk…not to be too specific or anything!

How did you make your left-over cheesy grits still cheesy (/moist and gooey). Mine usually turn into a block that I have to cut into. 😐

I added a bit of water to then when I reheated them. I actually prefer them thicker, so wasn’t a fan of the extra water when I heated them up. I added too much and made them runny.
