Look! Colors!


Pretty, right?

The veggie catch up from the weekend is in full force. The fridge is stocked with an array of color vegetables and my salad was packed full of a few of my faves (arugula, olives, cherry tomatoes, green beans, and blue cheese).


I dressed the salad with a new Vidalia Onion Vinegarette that was on sale at Publix this weekend.


I was sold on the 2 for $3 price tag and recognizable ingredient list.


The dressing was a little tangy, but really good. My little salad had a full 2 tablespoon serving, but that was a bit much. Next time a single tablespoon will do just fine.


I balanced the veggies with some carb and protein: sunflower bread topped with peanut butter and strawberries.

I have no idea, I would guess water skiing, but I think you already did that! Maybe aqua yoga (if that’s even an actual thing?!)
