Cheesy Butternut Squash & Quinoa Casserole

You’ll never believe what I have for you!

A new recipe! A real recipe! It has been far too long since I’ve shared anything new with your guys. Especially one that I can be proud of. 😉


Cheesy Butternut Squash & Quinoa Casserole

  • 1 medium Butternut Squash
  • 1 cup cooked Quinoa
  • 1/4 Red Onion
  • 3 Garlic Cloves
  • 1 Apple Chicken Sausage (optional)
  • 1/2 cup Milk
  • 1/2 cup Plain Yogurt
  • 1 cup Shredded Cheese
  • 1 T Rosemary
  • 1 T Oregano
  • 1 T Worcestershire Sauce
  • Salt & Pepper
  • Cinnamon

Preheat the oven to 375.

Peel, hollow, and cut the butternut squash into small bite size pieces. Sprinkle with cinnamon, salt, and pepper and bake at 375 for 15 minutes.

In a casserole dish combine all of the ingredients above + the cooked butternut squash. Cover with foil and bake for 25 minutes. Remove foil and bake 10 more minutes.


I served mine atop a bed of greens.


I love casseroles, I’m not sure why I don’t make them more often. They’re easy to throw together, you pretty much bake them and forget them, and they always make enough to live off of for days. Really, they’re a win-win all around. 🙂




Earlier this afternoon I snacked on a Kashi Bar.


For dessert – a Chocolate Vitatop (still BOGO at Publix until Sunday!!) with a scoop of Egg Nog ice cream.
