Lunch was… interesting today.


I’ve been STUMPED on meal ideas lately. I think my fridge and pantry need a revamping of sorts. Maybe that’s a challenge I’ll take on post marathon? Any fridge/ pantry make over shows out there looking for new contestants? Anyone?

Anyways… I was at a creative loss on what to make for both lunch and dinner today. I know I want good hearty meals to assist in carbo loading before my race, but everything in my kitchen just seemed…boring. With no inspiration and a lack of choices I eventually decided on eggs in a basket with some broccoli.


Now, obviously just eggs in a basket wouldn’t cut it for me. 😉 I live for toppings! Toppings are what make the world go around, are they not?


Variety in toppings is key too. And creativity. You can’t forget creativity.

So, one egg in a basket had fig jam with blue cheese.


And the other had tabbouli.


Like I said this lunch was ‘interesting,’ but nothing I would try again. Blue cheese and Fig jam? Umm… I’ve had better ideas and the tabbouli did not work. Oh well. At least I tried. 🙂

The post lunch cookie helped.


As did the tri-cookie snack before lunch.


I’m a cookie monster today.

Now, what to do about dinner? I might throw in the towel on this one and just eat out. 😉

I get in recipe ruts at times too when I just can’t think of anything at all to make! I vote eat out for dinner and take a break from the kitchen! : )

Hahaha I can be equally indecisive some days! (For example: This salad: I think dinner out is a grand idea – after all, it’s Friday, right? 😉

Its tough to plan meals everyday. If I can’t think of anything, I just stir fry mix veg with brown rice or any other sides as my go-to lunch or dinner. Simple and satisfying 🙂

I’ve been having some issues with creativity too… and lack of groceries certainly doesn’t lend to using the imagination! 🙂

I love the eggs in a basket! Although I’ve always called them “bullseyes.” Either way, I need to bring those back! 🙂

Great recipe for carb loading is this simple easy baked risotto.
Paired with a Italian style chicken sausage, grilled chicken, or any kind of protein and it is a big winner.

I have served this to several friends (and a picky bf) and everyone has loved it. Courtesy of the six o’clock scramble

* 2 Tbsp. olive oil
*2 cloves minced garlic
* 1 medium yellow onion, finely chopped
* 1 1/2 cups short grain white rice
* 6 oz. baby spinach
* 24 oz. reduced-sodium chicken or vegetable broth
* 8 oz. sliced cremini or baby bella mushrooms -I do recommend removing the stem
* 1/2 tsp. salt-free lemon pepper seasoning
* 1 Tbsp. sherry
* 1 cup shredded or grated Parmesan cheese, plus extra for serving-I love cheese- I probably ended up using 2 cups about

Preheat the oven to 400 degrees. Heat the oil in a Dutch oven or large oven-proof stockpot over medium heat. Add the onions and garlic and cook them for about 5 minutes or until they are tender. Add the rice c and stir to coat it. Stir in the spinach, broth, mushrooms and lemon pepper. Bring it to a boil and simmer it for 7 minutes.

Stir in 3/4 cup cheese, and then sprinkle the remaining 1/4 cup cheese on top. Cover the pot and bake it for 25 minutes.
Remove the pot from the oven, stir in the sherry (optional), and return it to the oven for 5 more minutes, uncovered. Serve it immediately, topped with additional Parmesan cheese, if desired.

My fridge is in serious need of help too!! I mean SERIOUS I’ve been cleaning it out today and some of the left overs in there I don’t even remember eating when I made the original meal. Scary.

Fig jam and blue cheese sounds tasty (maybe not with an egg?)

Maybe it was the egg, but last Thanksgiving I combined a jar of Fig jam and blue cheese and it was a really big crowd pleaser as an appetizer!

Fell off the wagon and consumed 10 of my favorite German spice cookies because they are finally in stock again. It took them one month! Ugh, now I have to work out for at least 2 hours tomorrow to even out. To bad it’s been a steady -11C all day!
