My prince has come!


Isn’t he charming?

Derek is hard at work trying to figure out how we’re getting to the airport tomorrow morning. Since our flight leaves at 6:30 am – and we need to be there an hour ahead of time – we’ve been a little less than successful at tracking down a friendly lift. Luckily we found a cheap parking lot nearby that includes a free shuttle ride to the airport. The parking lot + shuttle should be cheaper than taking a cab from a nearby friend’s house – at least that’s what we’re counting on after a little research. πŸ™‚

While he figured everything out, I made dinner.


This meal includes pretty much everything left in my fridge. (minus the figs – those were for dessert)


Simplicity has been the theme this week. My meat-less sloppy joe fits in there perfectly.


The meat-less sloppy joe included some meat-less crumbles that I dug out of the freezer. The crumbles were added to some onions and pepper then heated up with a generous portion of ketchup and honey mustard.

I served mine on a slice of spelt toast.


Derek on the other hand was scared to try the spelt bread because I called it spelt bread. I think if I would have called it whole wheat he would not have been the wiser. πŸ˜‰

Derek also had a problem the roasted broccoli rabe.


He kept asking me if I was sure it was ok to have the leaves on there.


Yes, Derek the leaves are ok to be left on there. πŸ™‚

It didn’t matter to him though, he ate around the leaves anyways.

Le Sigh.

Not sure how long I had a corn on the cob in the back of my fridge, but after roasting in the oven for a few minutes I tasted great.


I told you the figs would make an appearance for dessert. You’ll see them at breakfast too. πŸ˜‰


Oh wait, you can’t see them.

We have a 4:00am wake up call tomorrow. Oy vey!

Ha ha. I love Derek’s mistrust of your healthy goods. I think he must be related to my husband, except my hubs is large and black. Maybe long-lost cousins? :p

I use FastPark & Relax and love them! Lots of shuttles, we never wait long and it is only $5.49 a day.

Good luck getting up at 4 am – I would definitely struggle with that!

Sloppy Joes are my favorite comfort food, but i haven’t had them since going meatless.

Also, this year when I visited my bff in Virginia, my flight back to Cali was at 6AM, so I didn’t tell her until the night before. Worked perfectly, but she couldn’t really opt out of driving me!

Dying laughing because regardless of WHAT I make every night for dinner for my bf, there is SOMETHING he must pick at. However, he naturally just eats around things. Ex: he eats the bunches out of the honey bunches of oats and whenever he gets ice cream, he loves to get flavors with chunks in them (phish food) and then eat all of the chunks out and leave the ice cream…sigh.

but SUCCESS! Tonight I made a sweet potato pasta with a light sage butter sauce. Nothing to pick out, and he ate every bite! πŸ™‚

I like to chop up the broccoli rabe and saute it in a tiny bit of olive oil and water. Get it nice and hot then cover with a lid and steam through. Delicious!

My favorite way to eat broccoli rabe is chopped up with some house-made sausage, served over whole wheat pasta. Add some chili flakes for a little added flava. It’s so so good!

Haha Derek is kind of like my boyfriend… completely suspicious of anything healthy/different. And to him if it doesn’t have meat it can’t be good. :;sigh::

I’ll convert him one day… maybe not about the meat thing though.

Yay! I love how most guys can fix things πŸ˜‰ And meatless sloppy joes are yummo-sometimes I crumble up tempeh and us it as the “meat” but not very often because my boyfriend hates tempeh. Good luck on your trip, hope the traveling goes smoothly for you! (And the waking up at 4 am part too πŸ˜‰ )

I was just thinking I should go get something from starbucks when I read your comment about the ‘grande non-fat awake tea latte with one pump of pumpkin spice’. Of course, I ran out and got one right away! It was so good- now I have to find a way to keep myself from buying one of these every time I walk by Starbucks.
