Do you want to know how I spent my day?
Well, let’s just say there was a couch involved and back to back Lifetime movies – with Pearl Harbor thrown in there somewhere. It was glorious. ๐
I can’t remember the last time I spent the day on the couch. Sure, I did get around to cleaning at one point, but my butt was mainly on the couch. I need days like this more often!
My friend I was suppose to meet for lunch today ended up leaving her phone in her boyfriend’s car over the weekend and therefore was unresponsive to my texts and message. (Don’t worry Jess – I still love you!)
I debated going out to lunch on my own and was one step out the door with Maddie by my side, when I realized there was plenty of food in my apartment that didn’t required A) spending any extra money or B) driving anywhere to get.
Lunch at home? Sold!
I made a delicious pita pizza with marinara sauce, carrots, radishes, roasted red peppers, blue cheese, and arugula.
I <3 blue cheese on pizza. When blue cheese is heated the flavors are enhanced and evolve into a salty, buttery topping that makes every bite extra delicious.
After lunch Maddie kind of just stared at me. I think she was confused what I was doing home during the day and why I wasn’t devoting my entire day at home playing with her. She was totally guilting me into taking her to the dog park with her puppy dog eyes and pawing.
It didn’t take me long to cave either…
She spent approximately 5 minutes playing with the big dogs before retreating under the bench.
What a wuss.
She then found comfort under a shady tree.
And I found entertainment in taking a million photos of her.
Too bad she wouldn’t look at me for any of them. :/
The heat was a little much at the park, so we didn’t last long.
On the way home I had a carrot cake scuffin.
Dinner ended up being a mish mash of this and that from my fridge.
I love bowls of mix and matches. I make sure each bite always has a little of this and a little of that in every forkful.
In tonight’s bowl I had cous cous, tomatoes, tempeh, roasted eggplant, and mozzarella all on a bed of spinach.
Do you know I officially went the whole weekend with out going out to eat? 10 points for me!
When my sweet tooth took over an hour after dinner i made a little trail mix of chocolate, Kashi H2H, and dried fruit pieces.
Tomorrow I get to sleep in – this makes me happy! ๐
You know what else makes me happy? Reading a good book in bed.

Bleu cheese is so good! I have been buying a different kind from Whole Foods each week and it always makes me swoon ๐
I fine when I have easy days/an easy weekend, I am able to start the week with zest and a little pep in my step.

I wanted my day to include lounging on the couch… but too much laundry and a bedroom I couldn’t find under mounds of mess took place of that ๐ oh well!

I love blue cheese on pizzas!! It changes it up and makes it taste different but it’s really good. Same with adding feta. Hope you had a good weekend and enjoy your Monday!

I love dinners where you just throw together a bunch of stuff. And a bed of spinach is pretty much the perfect base for anything!
Your dinner reminds me of my college dining hall – I grad a bowl and take a small serving from the best stations. I notice your desserts is usually served in a relatively small bowl, what is your strategy for not refilling it over and over again. My self control works best when I either don’t touch anything sweet at all or fully indulge. Working on finding middle ground!

I love the Lifetime Movie marathon. Sometimes they are just too unbearably cheesy, but sometimes they are just right!

Whenever I took my dog to the dog park, she just hung around the people and avoided the dogs. We stopped going.
