Pretty Colors

by Meghann on July 21, 2010

Well, did I have a fun morning.

Let’s just say the rumor mill was flying like crazy around here and I was pulled into an hour and a half meeting to try and separate fact from fiction. Office drama is so much fun. 😉

The impromptu meeting took me through snack time and right into lunch. By the time I made it home for lunch I was more than ready to devour this delicious creation.

Isn’t it pretty? It was suppose to be my take on a Mexican Pizza, but kind of evolved into it’s own thing.

The base: La Tortilla Factory Multi Grain Tortilla

The toppings: Pinto Beans, Leftover Shrimp & Radishes, Tomato, Broccoli, Blue Cheese

The directions: Toasted under the broiler for 5 minutes/ until crisp

These flavors just worked so well together and I loved the array or colors with the purple radishes, green broccoli, red tomato, pink shrimp, etc. It was delicious and beautiful. A win, win!

With the Mexican/ Shrimp/ What ever the heck you want to call it Pizza I had a white peach.

Peach season is in full swing. This makes me happy. Very Happy. 🙂

Triathlon Video

My sister posted a great video that her boyfriend, Anthony, filmed of us at the triathlon this weekend. Check it out here!

(After watching the video I’ve concluded I need to work on my transitions. lol I look like I’m taking my sweet time while Kelly is all business. 🙂 )

Almost looks like Tina @carrotsncake’s dinner

Ah! Office drama is the WORST! I guess we’re all still in high school sometimes.

Lunch looks yummy; I love anything resembling a pizza!

Oh my gosh, that pizza-tortilla-concoction looks DELICIOUS! So creative and interesting use of all of the ingredients. Thanks for sharing this inventive lunch! 🙂

That video is so inspiring … BTW, I can’t believe I’ve been reading your blog for nearly a year, and just now finally added your sister’s blog to my Google Reader. She’s a great writer!

Haha, is it the The Office? Who’s gay, who’s having a baby, who’s a J.Crew model, who’s having an affair??? Love that episode!

Great idea.. and it’s pretty! I’m always a little scared of the broiler, because I have a tenancy to burn things to a crisp when I use it :p

Yummy! I bet that peach was yummy too but it looks like a radish!

Loved the video!!

I’m so jealous that you are able to enjoy your lunches at home! How exactly does that work? Are you really finished for the day by lunch, or do you just live close-by and swing home for a lunch hour?

12 Meghann July 21, 2010 at 4:51 pm

Hi! You can read about my lunchtime routine here 🙂

13 Rosey Rebecca July 21, 2010 at 3:45 pm

OH! Office drama is so ridiculous! Your lunch looks fabulous!

14 Stacey @ Tipping the (Kitchen!) Scales July 21, 2010 at 4:30 pm

Lovin’ the tortilla idea – it looks just like pizza!

15 Betsy July 21, 2010 at 4:41 pm

No offense, but does it really make sense to mention “office drama” on your blog when alot of your co-workers know you have a blog? It just seems that would make the drama worse.

16 Lacey @ Lake Life July 22, 2010 at 9:15 pm

I was thinking the same thing. The hospital I work at recently updated their policy about representing the company even while social networking and blogging. I try to avoid any mention of work at all just so it can’t come back to bite me in the booty.

oooh yummo – love that lunch!!

18 fitandfortysomething July 21, 2010 at 6:32 pm

what a delicious take on pizza!

Your lunch looks so good!

21 Heather July 21, 2010 at 8:14 pm

Office drama is so draining. Is everything at work OK now?
That shrimp creation looks yummers!

22 blissfulhope July 21, 2010 at 8:20 pm

Look delicious! I love all the colors too 🙂

23 Faith July 21, 2010 at 8:48 pm

Peaches are my absolute favorite – I can’t get enough lately!

24 Courtney July 21, 2010 at 9:05 pm

Ouch! Drama of any kind is bad. =(

Your lunch look delicious, though! You always come up with the most creative combinations!

25 Lacey @ Lake Life July 22, 2010 at 9:12 pm

Oooh I plan on searching high and low for a white peach. Do they have a different flavor compared to a traditional peach?
