Looking Back

by Meghann on July 20, 2010

Did you know exactly one year ago today I was dining on homemade frittata for dinner? Sometimes having an almost 2 year old blog is so cool. Especially for random facts like that. 🙂

Hopefully a year from today I can look back at this entry and go ‘Did you know a year ago today I had Shrimp & Grains for dinner?’

And I can remember that these were not your general run of the mill shrimp. These shrimp were sauteed with some old bay seasoning, radishes, and red onion. The radishes and red onion not only gave the shrimp some purple flair, but also a nice sweet crunch.

The grains were actually the last of a bag of Trader Joe’s Harvest Grain mix that has been in my cupboard for a while now. I love the array of textures and colors in this mix. It’s a great addition to any meal; I just had to find the patients to give it enough time to cook. Waiting for grains to cook has never been my forte.

I can also remind myself how I semi-burnt this mini bag of popcorn in the office microwave this afternoon.

And how my co-worker made fun of me as I took a photo of the popcorn while we discussed the play by play of my triathlon on Sunday. 😉

Last, but not least I’ll remember the Skinny Cow Ice Cream that I am really enjoying the taste of at the moment, but not the price.

$4.49 for a box of 4? No thank you.

One more thing…

I hope my future self – who is looking back at this post – has figured out where all my hangers are mysteriously disappearing to.

After scrounging up every hanger in my apartment I still had a decent pile of clothes on my coffee table in need of hangers.

Hangers? Where are you going?

It’s like the case of the missing sock all over again. 😉

I guess I could get rid of some old stuff to free up space. *sniff *sniff It’s like trying to decide which friend to say bye to. Not cool.

Lunchbox Staples

July 20, 2010

Need an idea for a fun new snack? Try this! Take the last crumbs of a bag of cinnamon pita chips… And combine with unsweetened applesauce. Apple Crumble anyone? You can thank me later. 😉 That snack was the highlight of my day. Crunch and sweet! Yum!  Lunch wasn’t bad either… just not as exciting more »

Advanced Training Mode

July 20, 2010

Good Morning! 🙂 My morning began with a beautiful 6 mile run. I’ve been playing with the training features with my Garmin Forerunner 305 lately and this morning I tested the ‘advanced training’ mode. This mode let’s you design a training run and set a pace for each interval. I set it for a 6 more »
