Extra Strength

I was in a packing frenzy this morning.

Not for myself, but for the upcoming conference my company will be attending at the end of this month. I stuffed four boxes full of collateral, shirts, pencils, banners, etc. then hauled the boxes to the front of the building. I guess I didn’t need to take that strength class this morning? I just got the same work out at work! πŸ˜‰

My mid-morning fuel was a mini peanut butter cookie larabar.


For lunch I had left over Spicy African Peanut Stew and Eggplant Fries.


Why am I eating hot soup in this heat? Your guess is as good as mine, but for some reason it just appealed to me in the freezer. Maybe it’s because it was still frozen when I was lusting after it?


The eggplant fries got a little soggy overnight.


They still made great soup dippers though.


Who needs bread when you’ve got eggplant fries?

Those eggplant fries are calling to me. Never thought to do that before, but I sure will now. I love the meals you create!

I actually find myself eating soup in the warmer months still too..not sure why, just crave it sometimes!

I always get in a good workout when I help with the conference shipping as well! Some days it’s actually nice to do something besides sit at a desk. πŸ™‚
