That day just flew by. With a 3-day weekend on the horizon, I’m not complaining. 😉

This afternoon I fueled up for hot yoga with some carrots and dried fruit.


That I dipped in some fabulous almond butter.



Hot Yoga.



Brussel Sprouts.


Eggplant Parmesan & RIcotta Sandwich


2 slices of eggplant dipped in egg whites then bread crumbs and baked at 415 for 20 minutes (10 minutes per side). Filled with ricotta, mushroom, leeks, and spinach, covered in marinara sauce and baked for 10 more minutes.


A winning combination here. 😉



Dark Chocolate Covered Edamame + TJ’s Mini PB Cups + Dark Chocolate Powerberries + Kashi Cinnamon H2H
