Waffle Buffet

This morning I was hard at work in the kitchen preparing a waffle buffet for Derek and I.


I started with a batch of Buckwheat waffles I made with a 365 Brand Mix.


An apple & pear mix that I had heated up with a little cinnamon for a couple of minutes in the microwave.


And a peanut butter sauce made up of heated peanut butter and almond milk.


‘Twas amazing. ๐Ÿ™‚


I topped my serving with a few cacao nibs.


It was actually Derek’s idea to have the peanut butter sauce as a topping for the waffle. He saw it on my blog earlier this week and was curious how it tasted.


Derek is a genuis, the peanut butter sauce was the perfect addition to the waffles. It added great peanut butter flavor to each and every bite without being too overwelming.


We had a guest for breakfast this morning.




Any guesses where Derek and I are heading today?!?!

I’ll give you a hint. ๐Ÿ˜‰


We’re going swimming with dolphins!!!!! Yay!!!

I’ve ALWAYS wanted to swim with dolphins and Discovery Cove has been a dream of mine since they opened it 10 years ago in Orlando! ๐Ÿ™‚

Derek purchased the package way back in February (for my birthday), but this was the first weekend we were available to go (have I mentioned my schedule is INSANE?).

We’re about to head out the door now! I’ll be back tonight with a full recap of all the fun adventures!!

OH MY GOSH! You’re so lucky!! I would give my right arm to swim with dolphins! I hope you get loads of pics, and have an amazing time ๐Ÿ˜€ I am SO jealous!!!

Awww yeah dolphins! I always wanted to do that. Ihope to do it some day on the cruise to the Caribbean I want to take.

Those waffles look awesome! I swam with dolphins in Jamaica on my honeymoon and it was one of the most amazing experiences of my life. You will have a fantastic time – enjoy!

I actually went to Discovery Cove YEARS ago, probably right around the time they opened. It was so much fun, especially as a 13/14-year-old dolphin lover who wanted to be a marine biologist at the time. Have fun! ๐Ÿ˜€

I live not too far away and have never been to Discovery Cove so I can’t wait to hear all about it!!!

As for the waffle buffet….they look amazing , especially after my plain Special K with bananas……

hey meghann! i love your blog + i read it religiously!
i’ve swam with dolphins in the past and they’re amazing creatures, but after watching a documentary called the cove, i’ll never swim with dolphins or go to an aquatic park again. i don’t want to sound preachy but this is a cause i strongly believe in and think you might be interested in it.

I was going to say this exact thing. I always used to want to swim with dolphins and then I watched this documentary and it broke my heart. I could never do it now with a clear conscience or even go to an aquarium or park.

I agree Ashley, The Cove is an amazing documentary. Dolphins are highly intelligent creatures are really should not be in captivity. The movie made me sick to my stomach to see what these animals go through.

I’ve been there and it is incredible!! You can also go in the lazy river and snorkel with stingrays. The water is REALLY COLD so make sure you get a wetsuit! Have fun!

I have to agree with emilyeatsclean. I loved swimming with dolphins and I hope you have a fantastic time, but please watch the cove and learn more about dolphins in captivity.

You are going to love swimming with dolphins! I went swimming with dolphins back in high school went I went to Mexico and it was awesome. It was definitely one of the best times in my life!

Girl you are going to LOVE Discovery Cove!

The place is amazing. I did the Trainer for a Day package about 7 years ago. My favorite was the stingrays we got to feed. I’m sure it’s changed since they, but OMG was it a blast!

It’s kinda funny you brought this up, as I’m wearing a Discovery Cove tshirt today! What can I say, I keep my tshirts forever!
