Friday Pancakes!

Happy Friday!!

A week from today I will be in San Francisco! The best part? I’ll be in San Fran purely for vacation. No work stuff, no conference stuff; just pure vacation bliss. πŸ™‚

But, that is next Friday and this Friday I am at my desk doing work – booo… At least the weekend is almost here. πŸ™‚

I ran a steady 6 miles this morning at a 9:15 pace. After so many weeks of no speed training, I am trying to gradually build some back up. Not for any particular reason, just because I think runs are more fun if you challenge yourself during it.

Nothing is better than returning from a long, hot run and finding your man making pancakes just for you!


Derek made a lovely batch of pancakes from a Whole Foods brand buckwheat pancake mix I had in the cabinet. He also made a strawberry topping by microwaving strawberries and some of the Crofter’s Superfruit Spread.


I had three of the pancakes with the strawberry topping, plain yogurt, and a sprinkle of granola.


I really love this mix! Derek had a hard time telling when the pancakes were done, but I enjoyed how thick, chewy, and hearty they were. The pancakes were also really filling to boot.


Alright, time to get back to work!

I totally made pancakes this morning too! Except mine weren’t as yummy looking as yours, haha. Mine had really odd instructions and ended up super thick!
