Breathe in. Breathe out.
That’s what I need to keep repeating to myself.
It’s been a long day and something tells me the next few days are going to be just as long. Tomorrow is when all the real fun begins, right? 😉
I ate my snack of yogurt and granola while standing up this afternoon.
It’s amazing how many last minutes details came up, well, last minute. I was running last minute errands all over Orlando this afternoon and didn’t get home until late. Once home I still had to finish laundry, pack, and halfway attempt to clean out my apartment.
Despite all that I still managed to piece together a halfway decent dinner.
I reheated some frozen Leek & Potato Soup that I served on a bed of kale (the last fresh veggie in my fridge) and topped with left over Easter Pork.
Bulking up the soup with the kale and pork not only allowed me to use up the remaining food in my fridge, but it also gave the soup a whole new depth of flavor and textures. It was like I was eating a whole new soup. 🙂
On the side I had the last piece of a batch of cornbread I had froze last month.
Dessert was my Easter Bunny’s shoulder and a couple pieces of dried kiwi.
I have a very early flight out of here tomorrow morning, so the next time you hear from me I will be in New Orleans!
