I’m on a tropical island

There are no words for how amazing my panini was at lunch today.


I mean look at it? Can you say holy yum?!?


I cut one of the whole wheat pitas from the farmers’ market in half and stuffed it with fresh tomato, avocado, olives, cheese, and plantains.


I then grilled it panini style on the george foreman for about 5 minutes.


This flavor combination was very light and refreshing. With each bite I closed my eyes and imagined I was on a tropical beach in the middle of no where. All that was missing was a pina colada. 😉


Ideally some blue corn chips would have worked perfectly with this dish, but in their absence fresh asparagus got the job done right.

Earlier I had a serving of TJ’s Peanut Butter Pretzels as a snack.


Yesterday was all about the printing and today is all about the shipping. Ughhh…

I love to make homemade paninis. Perhaps that solves my lunch problem for tomorrow 🙂

Yumm… that sounds delicious!!! I’ve never had avocado in a hot sandwich before but I can imagine how amazing it must be!

Everything tastes betters with maduros! They make some wicked breakfast pita-style sandwiches here in Trinidad, and one of the tastiest has the soft pita, a spicy tomato salsa, and maduros inside… best way to wake up the tastebuds in the morning.

That sammie looks AMAZING.

I have been on a Hugh Jass asparagus kick lately. My fav is a asparagus/provolone grilled cheese sandwich. YUM!

Your sandwich looks stellar. Wish I was eating it. Your asparagus looks raw – do you steam it at all? I’ve just learned to eat asparagus. Look at all the goodness I’ve missed out on.
