Mexican Pizza

Want to know what’s been brewing in my head all day?


Mexican Pizza!



It all started with the Whole Wheat Pitas I purchased at the Farmer’s Market on Saturday and could not wait to try.


Next the black beans that went into the food processor with some fresh cilantro and a drizzle of EVOO.



A concoction I knew would make the base for a Mexican themed pizza.


A sprinkle of cheese and asparagus for color.


The pizza baked at 415 for 10 minutes. Once out I topped it with green onion, black olives, avocado, salsa…


and maduros (sweet plantains)! πŸ™‚


I had never made maduros before and sort of made it up as I went by slicing the plantain and baking them at 415 for 20 minutes.



The maduros made a sweet topping to the pizza, but weren’t as great as the ones I’ve had at restaurants. I’m not sure the plantain was black enough to get the full flavor just yet.


My new obsession with Naturally Nutty’s Cinnamon Vanilla Sunflower Butter is a bit out of control.


I seriously CRAVE it during the day. It was amazing with some carrot sticks at my desk this afternoon.


FYI: printing 105 copies of a 2-sided 35 page document takes roughly 2 hours. Just in case you were wondering. :/

Dessert this evening was the last bit of the Spicy Chocomize Dark Chocolate Bar I had created.


I miss my chocomize bars already. πŸ™

A Shaklee Review

Laura from On the Threshold of Greatness recently became an independent distributor for Shaklee and offered to send me a sample of their H2 organic cleaner to test out.


In case you’re like me and are unfamiliar with Shaklee let me fill you in…

The company is very green and their site is all about promoting a healthier life and enviroment. It’s a company I could definitely get onboard with.


The Basic H2 Organic Super Cleaning Concentrate I received came with three spray bottles and instructions on how to create an all-purpose cleaner, degreaser, and window cleaner right on the bottle.

Just fill the bottle with 16 oz of water

And add the suggested amount of H2 concentrate.

Easy Peasy.

Apparently the 16oz of H2 concentrate will create up to 48 gallons of cleaner.

For the past week I’ve been using the H2 concentrate in all three formulas and admit that I am impressed. I love how there isn’t a funky smell, it’s great at cleaning messes, and how long I know this product will last.
