Almost Like a Souffle for Breakfast

by Meghann on March 29, 2010

Good Morning!

Playing weekend catch up?

In case you missed it:

‘Twas not a pretty morning in Central Florida this morning.

Boooo….Perfect way to start a Monday, right?

Actually it was a pretty great start to the Monday considering I was able to sleep in this morning. I could get used to the extra hour of sleep Mondays have been bringing me this morning.

I rolled out of bed around 7:00 and took my time getting ready for the day.

Which included preparing this amazing bowl of instant baked oatmeal.

I followed Tina’s directions and combined a packet of Quaker’s True Delights Hazelnut Mocha Instant Oatmeal (a free sample) with pumpkin, egg whites, and baking powder.

After two minutes in the microwave I got this lovely cake like creation.

That I topped with almond butter, yogurt, pear, and pumpkin spice.

Mmmm…. the texture of the instant baked oatmeal reminds me of a soufflé. It’s light and melts in your mouth, yet has the staying power of regular ole oats. Delicious.

Time to get this party errr…. work day started.

Have a good one!

Yum! I love the sound of a soufflé. I need to try that, but I don’t really keep baking soda handy. I hope it will work without it

2 Marina March 29, 2010 at 8:46 am

I love soufflés like that!
I wish I had some pumpkin for it though :/

Hehe that does look like a souffle cake thing! Luxury 🙂
I tried baking oatmeal this morning….Not such a fan – I think stove top oats is THE superior way to cook oats, IMHO!
Have a good day 🙂

13 melissa March 29, 2010 at 10:23 am

NYC looks exactly like that this morning. yuck. (oh, but with less palm trees)

14 jentrinque March 29, 2010 at 10:33 am

At least you had a nice weather weekend before the rain! I’m ready for spring and warm temperatures to arrive in North Carolina.

15 missyrayn March 29, 2010 at 10:35 am

My day woke up like that. I have a good busy but easy day so that makes the rain more bearable.

16 eatdrinkandbemerrynyc March 29, 2010 at 10:53 am

I need to try baked oatmeal! looks AMAZING! And it’s SO grey here in nyc 🙁

17 theprocessofhealing March 29, 2010 at 10:53 am

Yum, that sounds good!!! I have been meaning to try that recipe but I haven’t gotten around to it yet. I love oats in any form though!

18 lisarphoto423 March 29, 2010 at 10:56 am

RASCAL FLATTS! I LOVE THEM!!! So lucky that you managed to watch the concert..FOR FREE! Better then not seeing them at all…LOL. That soup looks amazing. It would be perfect for a day as such in Boston (cold, windy, and raining = yucky!).

Thanks for sharing the recipe!

23 Sarah March 29, 2010 at 11:48 am

Yummy! Do you think I could use a whole egg instead of just the white or would that make it too egg-y?

24 JessicaE March 29, 2010 at 12:29 pm

We had a storm here this morning! But there is something col about almost black skies and trees waving 🙂

I LOVE ELLEN! And that soup is right up my alley!

Random question- how many marathons do you do each year? I was thinking about doing a second this year, but I’m not sure about how my body will feel about that

26 Meghann March 29, 2010 at 2:02 pm

I did my first marathon in May of 09 and this will be my 4th marathon since that first one.

27 cara March 29, 2010 at 2:04 pm
