An Odd Obsession

I really need to get better at taking my tupperware home. I noticed this afternoon I have quite a collection growing at my desk.


This doesn’t include the bag of tupperware in one of my desk drawers. Oopss..

I have a slight obsession with tupperware actually. When ever Derek helps with my dishes, he always comments on the fact that more than half my dishwasher is always tupperware. I use tupperware for everything: snacks, left overs, chopped veggies, fruit, bulk bin items, etc. The little plastic containers are the best thing ever. 🙂

Alright, I know I’m a nerd. I’ll stop now.

Instead let’s talk about the tasty snack I had this afternoon.


A new favorite of mine: dried fruit with almond butter. A combination full of fiber, protein, and complex carbs that was the perfect pre-gym fuel.

I hit the gym after work and completed the upper body portion of the plan Sarah created for me. Half way through my strength training session a 15 minute ab class broke out on the floor and I decided to join in.

The class was 15 minutes of back-to-back 30 second ab intervals. Surprisingly the class was composed mainly of males (I’m used to ab and back classes being almost all female). But, I could see why it was all males. It was tough and by the end my core was burning.

My new goal is to take that 15 minute class at least two or three times a week. It’s a great work and for someone like me, who hates doing crunches, it’s the perfect amount of motivation.

When I made it back to my apartment I still had no clue what to do for dinner. I was determined to try and be at least a little creative, so I tried my hands at a Mexican Casserole of sorts.



  • 1 can of Black Beans
  • 1 container of Minute Ready to Serve Brown Rice
  • 1 carrot
  • 1/4 red pepper
  • 1/2 small yellow onion
  • 1/2 cup frozen corn
  • spinach
  • tomatoes
  • 1/4 cup (?) plain yogurt
  • 1/2 cup (?) shredded cheese
  • cilantro
  • S&P

This was an experiment on my part. I basically just threw what ever looked good in a loaf pan and put it in the oven at 375 for 20 minutes. I had an idea of how I wanted it to come out and was pleasantly surprised with the results.


I topped my serving with plain yogurt and salsa.


For a meal on a whim, this was pretty darn tasty!

I had another 1/3 of my tropical themed chocomize bar and two thin mints for dessert.


The basil is growing on me with this bar. I knew it would. 😉

Now I am sitting back with a hot cup of tea and E! True Hollywood Story featuring Kendra. By the way, I still can’t get over the fact that she’s younger than me! Oh well.
