A Little Out There

by Meghann on March 10, 2010

For the past year or so I have been drooling over the pumpkin butter and tempeh sandwiches that are some what regularly featured on

The combination of tempeh and pumpkin butter (or any sort of jam) seemed a little out there, which I believe only enhanced my need to try it. It has always been my philosophy that the stuff that seems ‘out there’ is usually the stuff that tastes the best. 😉

After so many months of thinking to myself ‘I need to try that’ I finally took the plunge today and made a tempeh, Crofter’s Superfruit Spread, and spinach sandwich for my lunch.

Umm… yeah….Why did I wait so long to try this again? Basically this sandwich rocked!

If you enjoy turkey and cranberry sandwiches, then you are going to LOVE this combination. It reminded me left over Thanksgiving sandwiches; the only thing missing was the taters. The sandwich was sweet, chewy, and absolutely amazing. I’m sure you will be seeing this combination again and again on Inner Workings… 😉

With the sandwich I had a handful of snap peas.

I love how fresh these taste raw. They are so light and crispy, I instantly feel healthier with every bite.

I also had some blue corn chips with salsa.

All together.

Earlier I snacked on some Nature Valley Granola Nut Clusters

Bell Helmet Winner

Thank you to all who entered my Anniversary of Awareness Giveaway yesterday. All of your comments were very kind. My Sister and I were both very touched to see so many people who have the same passion towards spreading the message of bicycle safety and wearing a helmet as we do.

I was also touched by all the people who entered with the intention of the helmet going to a loved one.

In fact that just happened to be the case behind the random winner. 😉

Congrats Jessi, I hope this will encourage your sister to wear her helmet.

E-mail me at with your shipping information and the helmet will be on its way!

I’ve been putting pumpkin butter in all my sammies lately–such a secretly amazing addition!! Pumpkin butter and mozzarella cheese is the latest!

2 gina March 10, 2010 at 3:16 pm

That looks like a winning sandwich–I love the grill marks on the bread! Did you put a nutbutter in too?

3 britchickruns March 10, 2010 at 3:21 pm

5 Anna March 10, 2010 at 3:42 pm

I’ll have to give that a whirl– I do the same thing every time I see it on Kath’s blog! I love tempeh (raw) and hummus wraps too– you should give that a try!

you must try tempeh, pumpkin butter, and nut butter! Such an odd combo but it is awesome!

7 Heather March 10, 2010 at 3:58 pm

that sandwich looks amazing! i need to find some tempeh to try…i’m not a fan of tofu, but this looks like the texture might be a little more up my ally!

8 Lauren @ Eater not a runner March 10, 2010 at 4:01 pm

That sandwich does sound good! What kind of Tempeh do you buy?

9 Niki @ Niki's Neverending Adventure March 10, 2010 at 4:37 pm

I’ve never had tempeh before but love pumpkin butter! Will definitely be on the look out for some tempeh to try!

10 Lisa (bakebikeblog) March 10, 2010 at 4:45 pm

ooooh that sammie looks so good! Made me hungry just looking at it!

11 Debbie~ March 10, 2010 at 4:46 pm

I dunno if Tempeh isn’t my thing or I’m just preparing it wrong. I made it once and it was soooo bitter and weird tasting. Is there something you do to prep it before, or do you just open up the package, slice and eat? The sammie looks delicious:)

Oh man, that sandwich looks perfect! I remember (just five years ago, maybe) being so against sweet-and-savory sandwich combos, but I’ve really come around now. I’m vegetarian, but I love me a good Quorn Turk’y roast + cranberry leftovers sandwich!

13 thewhatkateateblog March 10, 2010 at 5:24 pm

this may have just persauded me to try the tempeh combo! have a good wednesday 🙂

14 Ashley March 10, 2010 at 5:30 pm

That actually looks really good…I’m kind of curious about other combinations now. Apple butter and tofu anyone?

15 jentrinque March 10, 2010 at 5:30 pm

I think I might try this…is the tempeh bitter tasting plain like that?

16 Heather March 10, 2010 at 6:25 pm

Isn’t it weird how seemingly random things can go together so well?!

17 christina cadden March 10, 2010 at 6:41 pm

That sandwich does sound good!

18 Travel Eat Love March 10, 2010 at 7:03 pm

21 theprocessofhealing March 10, 2010 at 8:03 pm

YUM! I’ve been wanting to try that.. I need to! Did you just use plain, raw tempeh?

22 Karla March 10, 2010 at 8:16 pm

Is the tempeh just raw?
I want to try it! I’m a fan of tempeh 🙂

23 Brittany March 10, 2010 at 8:46 pm
