Mom is Doing Good!

Good news! I spoke with my Dad this morning and my Mom is resting comfortably after her surgery. Everything went as planned and she should be home this evening.

Love you Mommy! Rest up and I’ll see you soon!! πŸ™‚

This morning I snack on a Vita-Top muffin.


FYI: Vita-tops are BOGO at Publix this week! Stock up! πŸ™‚

For lunch I had my last Black Bean & Beet Burger from the batch I made earlier this week.


I topped it with salsa, cheese, and spinach.


And had Okra Fries with ketchup on the side.


Can’t forget the pickles!




Gotta get back to work!

I just discovered okra, and I’m really impressed with the taste. The texture is funny though: hairy on the outside and slimy on the inside. Sounds gross, but when they’re cooked they’re really good!

Glad your mom is doing well. I really wish I had a Publix near me so I could try some Vitatops for cheap, they are so pricey at my grocery store. Oh well, I’ll live vicariously through you.

thats one of the reasons i stopped doing my running workouts before work and the gym too…i like to looooooooooooounge around, watch the weather…check Facebook…i HATE being rushed! but if i have to do it, i will, but i do everything in my power to NOT have to πŸ™‚

I’m also glad that I’m not the only weirdo who hates getting dressed right after my showers. Unless I’m actually in the water/shower/rain I HATE the feeling of being wet. Getting dressed while damp is just annoying.

I’ve never had Okra, but I was just informed my my fiance’s buddy that it’s yummy and I should have some. So I’ll have to give it a try. πŸ™‚

I’m glad your mom is okay! I’ve bought Vita Muffins a few times and can’t really get into it — it just tastes like a lo-fat muffin, not a REAL one, and I’d rather have the real thing, calories and all. πŸ˜€

Beet and Black Bean burgers? Interesting! Your lunch looks great. I haven’t tried okra yet but I always see them (in fry form) on blogs. Carrot fries are my personal fave. πŸ™‚
