Fruit Leather & Almond Butter Sandwich

Have you ever heard of a Fruit Leather & Almond Butter Sandwich?


Me neither. Which is why I thought it would be fun to give it a try this morning. πŸ˜‰

You start out with fruit leather and Barney Butter.


Separate the fruit leather and smear with barney butter.


Place the other half of the fruit leather back on top and enjoy.


Nom Nom Nom

I’d say that was one tasty, creative snack. πŸ˜‰

I have another Doctor’s appointment this afternoon (Don’t worry, I’m fine! Just another routine test) so I packed my lunch to eat while I worked at my desk.


Thank god I was smart enough to pack this last night! If I had waited until this morning I would have been screwed on time.


Once again, my lunch was made up of several parts that had to be assembled in the office kitchen.


I packed a salad base of spinach, olives, tomato, and corn with a side of black bean burger balls and salsa. I heated the balls in the toaster then added them to the salad base with the salsa.



Expect to see left over cornbread as a part of every meal until it is gone. πŸ™‚


I think cornbread has to be one of my favorite types of bread. I could have a piece with breakfast, lunch, and dinner and not get sick of it.

Time to get back to work! I’ve got things to do and people to see. πŸ™‚

Haha I made pumpkin cornbread for Thanksgiving and definitely ate it for bfast, snack, lunch, snack, dinner, and dessert until the whole pan was polished off. Something about it is so lovely–the little cornmeal pieces? The sweet yet savory? Who knows.

Your office lunch/containerfest looks so much prettier than my messy equivalent! And the cornbread has been tempting me since yesterday, when I saw it and planned on making some (but was too tired to go get cornmeal at the store; in retrospect, gluttony should’ve beaten laziness).

i totally agree with you on cornbread- it never gets boring! i love it, so i save it for special occasions and always savor every last piece πŸ™‚

Sorry if you answered this in comments earlier, I was just wondering–I think I recall that you would typically let Maddie out on your lunch break on days you ate lunch at home? Does she get lonely/still need to go out during the day when you eat lunch at work?
My parents and I always say how too bad it is that we can’t let our dog know when to expect us home!

No kidding about the cornbread!!! It is DEFINITELy at the top there with my favorite breads too.

And yes, that is a creative snack indeed, though i’ll need a few moments to let the combination sink in…must try VERY hard to imagine what the snack tastes like. hahahah

Wow I just now saw that my ocmment about you eating low cal foods sparked so many other comments. I didn’t mean to cause any controversy on your blog!

Okay, so in regards to Caitlin, I don’t think she gets comments because she is right, she DOES eat enough. She eats real bread, a portion size of PB/AB and large enough snacks throughout the day!! Meghann, I am sorry, but you eat low cal everything. Your bread is low cal, you always use egg whites, you eat a half a cup of low calorie frozen yogurt, ETC, ETC. I just never see you LIVE a little. When you are training for marathons and running as much as you do, it’d be nice to see you treat yourself every once in awhile. That is all. I just want you to take care of yourself. I really do mean well, even if I come across as rude. Sorry!

Your comment sparked many other comments because you are not Meghann. You do not know how she feels every day and how her body works because… you are not Meghann. The girl eats dessert every night – maybe you should read her blog.

How many times does Meghann have to go out to dinner, order dessert, stop for a sundae, etc, before people will freaking get that she eats what she wants when she wants, and does NOT restrict?

Honestly, since when is eating how you want and indulging when you feel like it — and not using a marathon as an excuse to gorge on unhealthy foods — not “living a little”?
