Life with out a power cord

Did you miss me?

It was oddly freeing not to have access to my laptop last night. I thought that I would go crazy wondering what was going on in the world, but instead I just kept myself busy in the kitchen and zoned out in front of the tv. It felt nice. ๐Ÿ™‚

Derek was kind enough  to overnight my power cord yesterday and according to FedEx I should have it in my hands in the next couple of hours. *Fingers Crossed* One night was ok without internet, but I think two might be cutting it close.

I was pretty exhausted the rest of the afternoon yesterday. I believe my lack of sleep from the weekend finally caught up to me and I was ready to curl up and take a nap on my desk around 3:00.

Donโ€™t worry โ€“ I resisted. Instead I made a big mug of double caffeinated tea and tried this new-to-me Chocolate Bumble Bar I purchased at Whole Foods over the weekend.


The bar was very sticky and sweet. The chocolate flavoring was very subtle, yet still evident and the nuts gave the bar a great crunch.


Overall I liked it and would purchase one again. ๐Ÿ™‚

Weโ€™re going through another cold spell in Florida (Did I mention last month was the second coldest February on record for Central Florida?!?!) and yesterday I was craving a big bowl of homemade soup.

Per usual I tweeted my yearning for a good soup recipe and was ecstatic to see all the suggestions everyone had to offer. After some mental deliberation I decided to go with Mama Peaโ€™s suggestion of her Spicy African Peanut Stew


It was one of those very easy recipes where you throw everything into a crock pot and lets it sit for hours. Of course I donโ€™t have a crock pot โ€“ or hours โ€“ so I threw everything in a big pot and brought the heat to high for 20 minutes and then to medium for another 40 minutes.


While the stew was bubbling on top of the stove, I had some cornbread baking baking in the oven.

30 minutes laterโ€ฆ


I topped my big bowl of stew with some peanuts and had a huge hunk of cornbread on the side.


The stew was perfect. It was spicy, flavorful, and had an underlying nutty flavor.


It also made a ton so I have loads of left overs to enjoy in the future.


For dessert I had the last of my peppermint ice cream with a candy cane joe joe crumbled on top.


RIP Peppermint Ice Cream! Until we meet again next year!

In the mean time I saw the slow churned Girl Scouts Thin Mint Cookie Ice Cream has recently hit the shelves. I see a purchase of that baby in my near future.  ๐Ÿ˜‰

This morning I decided to take it easy and enjoy a leisurely ride on the stationary bike in my apartmentโ€™s gym. I did 30 minutes at a level 2 pace and didnโ€™t even break a sweat. I just wanted to loosen my legs up before giving them a deep stretch. 

Since I had so much extra time last night, I went ahead and prepared a batch of overnight oats that I refrigerated over  night and pulled out this morning.


Last nightโ€™s prep included:

  • 1/2 cup Hot Multigrain Cereal
  • Plain Yogurt
  • Unsweetened Almond Milk
  • Strawberry Preserves
  • Cinnamon
  • Cacao Nibs
  • Dried Cherries


This morning I topped the bowl with fresh strawberries and some granola.

yum, that soup looks good! I have so many soups I want to make before the weather gets too warm. I love making a big pot of soup and eating it for days! so so good

I have been trying very hard to wean myself off my laptop. I find myself chained to it the majority of the day. I think a missing power cord might be the ticket! By the way, I tried your cereal, yogurt, and fruit breakfast today! Sooo good!

Oh the Thin Mint ice cream is fantastic. My husband and I have already rocked two cartons of it this year!!! Can’t wait for my cookies to get here!

I love corn bread or just any kind of bread. I would have eaten that whole corn bread by myself in one sitting!! not kidding.
Bread is my downfall. I could eat bread and butter for breakfast, lunch and dinner.

btw, what brand is that hot cereal? I’ve been wanting to try something different for breakfast other than oats…maybe that would be a good change.

I admire your attitude minus a workig laptop – I go MAD if I can’t use mine, I feel so lost without it!!
Love the sound of that soup, it looks delicious! I made a soup just now too – squash and sheep’s milk cheese – SO AMAZING! Soup is so comforting ๐Ÿ™‚

Inspired by you from previous posts I made overnight oatmeal last night as well. I used grated apple, pom yogurt and raspberries. I topped it with almond butter and it was delish! Thanks for the great idea! ‘Twas yummy.

You should definitely get a slow cooker!! I threw a whole chicken in this morning with a few potatoes and voila! Done!!

We were internet-less for a few hours last night — we got a new modem and had to set it up — and it was surprisingly nice to disconnect for a while! I really enjoyed my dinner instead of eating it in front of my laptop ๐Ÿ™‚

That bar looks really great, i’ve picked that one up and put it back several times. I may have to give in and try it!!!!
Soup… yum!! I love peanuts on things like soups and stir frys.

Yikes I don’t know if I could live without a laptop/the internet! I guess that just goes to show how addicted I am haha. I just bought the Thin Mint ice cream last week, and it’s ah-may-zing. It’s like cookies and cream, but minty and oh so good. go get it! ๐Ÿ˜€
