Because honestly this was my favorite part of the day.
Self Serve Frozen Yogurt!!
I have been looking forward to this all week.
Wait, scratch that, I take it back. Seeing this sexy beast was my favorite part of the day.
Actually sexy man + frozen yogurt = best part of the day.

When sexy man arrived this evening I had a delicious meal waiting for him to enjoy.
Sweet Potato, Kale, and Barley Soup
- 1 small onion, chopped
- 1 large sweet potato, chopped
- 2 carrots, chopped
- 1/2 cup sliced mushrooms
- 1 can chickpeas
- 1/2 cup dried barley
- 2 cups kale
- 1 can vegetable broth
- 2 cups water
- 3 T italian seasoning blend
Start with a drizzle of olive oil in a hot pot. Add the vegetables and cook until onion is translucent. Once the vegetables are soft toss in the remaining ingredients and bring to a boil before lowering to a simmer for 30 minutes.
The idea for this meal came to me a couple of days ago when I realized I had yet to open the box of barley I had purchased a few weeks ago.
The barley added a great oaty flavor to the soup. Now I just need to find other creative ways to use the barley. Any suggestions?
I added a few raisins to my serving of soup to give it a sweet touch.
And had a piece of toast on the side.
Great soup!
This afternoon I snacked on a refreshing serving of cantaloupe with a dollop of almond butter for good measure.
My lunch hour was extra special today thanks to an extra special guest.
Hi Megan!
Megan just got an internship right down the street from my office, which also happens to be right down the street from my apartment. We met at my place for lunch and played catch up. I felt like it had been forever since we last saw each other!
Megan brought what looked like a delicious bowl of cous cous and I made myself a veggie wrap with left over yuca.
The wrap was amazing. I stuffed it full of hummus, tabouli, avocado, broccoli, and sprouts.
It was lean, green, and very filling.
Dessert consisted of one almond butter chocolate chip cookie.
And I end with the beginning – the Nature Valley Granola Clusters that made up my morning snack.
Seems so long ago now. 🙂
Tomorrow is going to be a good day. Derek is running the Seasons 52 5.2K and for once I get to play the role of spectator. I’m going to be the best spectator there ever was! It should be a fun reversal of roles for the day.
