Double Dose of Bulgar

by Meghann on January 21, 2010

This morning I had what I would consider perfect running weather.

Temps in the 60s, a slight breeze, and medium humidity.

The great weather made my 6 miles feel like nothing. I maintained a 9:00 minute pace and returned to my apartment just a tad bit sweaty.

Of course as soon as the sun rose the clouds began to move in and the humidity took over. Just goes to show you how quickly Florida’s weather can change and why I LOVE running early in the morning.  🙂

Last week I got to the bottom of two of my favorite jars of peanut butter.

These are the last of my Naturally Nutty Peanut Butters I was sent to review months ago and I am really sad to see them go. Naturally Nutty seriously makes the best peanut/almond butter out there!

Of course I couldn’t just casually discard my favorite jars of peanut butter, oh no, these babies had to go out with a bang!

Enter my my favorite oatmeal alternative: Bulgar Wheat.

Bulgar wheat became one of my favorite hot breakfast options last winter and I am sad to admit it has taken me to the middle of January to replenish my stock for this winter. I thought bulgar wheat could only be found at Whole Foods, but on Sunday I discovered it in the Greenwise section of my local Publix and immediately snapped it up. 🙂

This morning I boiled 1/3 cup of water then added 1/3 cup of dried bulgar wheat, a pinch of salt, 1 teaspoon of brown sugar, and 1/4 of an apple. I simmered the mix on low for 12 minutes, then distributed it between the two jars.

I topped the jars with a spoonful of homemade granola each and the remaining quarter of the apple.

The jars were tiny, which was why I had two jars for breakfast instead of one. It was kind of fun having two mini breakfasts. I was sad when I finished off my first jars of bulgar, but happy again when I realized I had a whole other jar! 🙂

The Spark Winners!

I enjoyed reading everyone’s comments from yesterday’s ‘The Spark’ giveaway. It was nice to see so many ‘lurkers’ come out of the woodwork. You guys had some great things to say and they all brought a smile on my face.

Butter toffee peanut butter sounds nothing short of incredible 🙂 . I’m not sure I’ve heard of the brand, I’ll have to investigate if they sell it in grocery stores or just online. -Katie

I’m so jealous of your running weather. It’s freeeezing here in NY. I’m not a huge fan of running in the blistering I can’t wait for spring to start running in the fresh air again!

20 adrienmelaine January 21, 2010 at 1:19 pm

I ran outside this am to and got to see the sun rise.. the only difference was that I was in leggings and a longsleeve thermal shirt and you were probably trotting along in legging capris and a tank- jealous!

Have you ever made your own nut butter?

21 Tay January 21, 2010 at 1:23 pm

I’ve been debating on ordering those nut butters for a while, but can’t decide on flavors! What were your top 2 or 3? I’ve heard great things about the vanilla almond one. And I also want to try the mocha PB!

22 Meghann January 21, 2010 at 1:59 pm

LOVE LOVE LOVE the Vanilla Almond butter.

Haven’t heard about the Mocha PB, but now I want that one!

23 Evan Thomas January 21, 2010 at 1:24 pm
