Quiet Time = Productive Time

by Meghann on January 18, 2010

The building is quiet, I have had no meetings, and my to-do list is getting smaller and smaller.

Gotta love days in the office likes these. πŸ˜‰

I may not be one of the lucky few to take today off, but I am really appreciating the quiet, slow day to get a lot of much needed work done.

Mid-morning I snacked on the last of a bag of Trader Joe’s Peanut Butter Pretzels.

The word has really spread how obsessed I am with these because I realized this morning as I was finishing this bag off that there was 5 more waiting for me in the pantry that readers and other bloggers have graciously sent me over the last couple of months. πŸ™‚

I really wanted to be original for lunch, but all I wanted was a big platter of munchables. (yes, I just made that word up)

In the center of my plate at a nice glob of tabouli and hummus.

My lovely dips were surrounded by mushrooms, a pickle, carrots…

asparagus, cherry tomatoes…..

pita wedges and an apple.

The plate had a little bit of everything and it was fun to have a little bit of this and a little bit of that.

There was also a dollop of almond butter on the side to dip the crunchy apple slices in.

One great lunch!

I continued to get a lot of work done this afternoon.

A few moments ago I just broke into my afternoon snack of a fruit leather and two Almond Butter Cookies from yesterday.

This day is flying by! 5:00 o’clock will here before I know it! πŸ™‚

I loooove platter lunches! I made one today, too, very similar to yours except with tzatziki instead of tabouli. Yum! So freaking good!

I’m so glad I saw this! I’m heading to Trader Joe’s after work and have been meaning to try them (because I too notice how often they show up on here and how good they look). They’re soooo going on the list- and yes, a list is necessary for TJ’s, otherwise I just go insane in the aisles…

Wasn’t there a snack kit called “Munchables” when we were kids?

Regardless, your lunch looks delish and like it came from a restaurant πŸ™‚

16 Holly January 18, 2010 at 7:54 pm

19 Gracie January 18, 2010 at 7:59 pm

ooooh – that lunch is like a work out art! πŸ˜› I love having a variety of many different foods. All of those flavors and textures make for a much more satisfying meal. And girl, you really know how to get lots of fruits and veggies in during the day. I’m gonna try to catch up πŸ™‚

I would probably be addicted to those PB pretzels if we had Trader Joes in Canada!! I’m actually going to Boston in April and one of my requests is that we stop at TJs to get pretzels. πŸ™‚

I used the word “munchables” all the time on my blog when I first started using it as a food blog. Awesome word πŸ™‚
