It suddenly hit me this is my last moments of ‘me’ time before the marathon weekend madness officially hits tomorrow.

- 8:00 am – 3:30 pm: Work
- 4:00 pm – 6:00 pm: Marathon Expo with the Sis
- 6:30 pm – 8:00 pm: Dinner with Sabrina (!!)
- 8:00 pm – 11:00 pm: Avatar with Derek
Saturday
- 8:00 am – 9:00 am: Last minute packing
- 9:30 am – 11:00 am: Drop Maddie off with my little Bro
- 12:30 am – 2:00 pm: Blogger Lunch
- 2:00 pm – 5:00 pm: Check into hotel
- 5:30 pm – 8:00 pm: Dinner
- 8:00 pm: BED
Sunday
- 3:00 am: Alarm
- 3:30 am: Bus to starting line
- 5:40 am – 10:00 am: MARATHON!!
- 11:00 am: CELEBRATION!!! 🙂
Madness, right?
The crazy part is I left a lot of details out of the make shift schedule. This weekend is going to be non-stop, but boy is it going to be so much fun! I feel like its Christmas all over again.
I may have been going a little crazy talking everyone’s ear off about the marathon at the office as well. I’m sure they are ready for me to race this race as much as I am.
While chit chatting I had some carrots and almond butter.
And a bite of my co-worker’s brownie. (Hi Shelley!)
A big sales meeting is happening today and tomorrow, so our office is filled with left over meeting treats. I also managed to nab some bites of cucumber, tomato and strawberry on a couple of kitchen visits. I guess I was just feeling snacky today?
I had some fish that was on its last leg and needed to be cooked for dinner or thrown away.
I dipped the fish in an egg wash and then coated it with a mix of almond meal, flax seed, whole wheat bread crumbs, and various spices. The fish was baked at 415 for 12 minutes.
There was so much breading and egg left over! I was suddenly inspired to make hush puppies.
I combined the remaining breading mixes into little balls then fried them on the stove top until they were golden brown (or you know a little burnt).

The yucca fries were baked at the same temp at the fish, but were in the oven for about 10 minutes longer.
I broke down yesterday and told my sister I would pay her to clean my apartment. It felt so good to come home to a sparkling apartment this afternoon! No more boxes, no more clothes needing to be put away and my bed is actually made!
Kelly was also kind enough to leave me a little surprise in my fridge – a piece of my Daddy’s birthday cake that I had missed yesterday!!
My Mom made my Dad a homemade cookie cake and I was bummed I missed out on it. Didn’t it look yummy? Go Mom!
I had my piece for dessert. Delish!
Some running clothes are finishing up in the dryer. I think I may just bring every piece of running clothing I own to Disney with me and decide what I’m going to wear once I get there. 😉
