Boy did I miss this face. 🙂
I missed this face too.
But I don’t get to see that face until Friday. Not too much longer now!
I headed straight from the airport to my parents as soon as I landed this morning to retrieve my little bundle of joy. 🙂
After 3 days of meals out, raiding my parent’s fridge for lunch was a welcomed change of pace.
Baked sweet potato topped with black beans, mushrooms, avocado, and a sprinkle of cheese.
My eyes were a bit bigger then my stomach and I only finished about 3/4 of the dish. Still it was just what I needed. 🙂
After lounging around my parents for a bit, I finally headed back to my apartment. Oh Apartment, how I missed thee.
I missed my yogurt too.
Plain Oikos + Generic Cereal
I spent my afternoon working from home and catching up with life. You should be happy to hear I finally brought the boxes to the dumpster. Go Me!
Dinner was randomly thrown together.
I knew I wanted tofu and I knew I wanted green.
I sauteed a mix of kale and spinach with tofu, mushrooms, beets, and onions and steamed some rutabaga on the side.
Caitlin had discovered the elusive Peppermint Ice Cream at her Publix the other week (she knows me so well) and since Edy’s was buy one get one free I picked up the Egg Nog flavor to try as well.
Samples of each were required fresh from the carton.
Egg nog is one of those things that I enjoy the taste of, but don’t actually like drinking. The milk texture of the drink throws me off! However, the ice cream was fabulous.
I had a small scoop of each flavor as my dessert.
Yay for peppermint ice cream! It feels great to have you back in my life. 😉
An early morning run is in the books for tomorrow. This trip threw off my training schedule and I’m more than ready to get back on track.

I have both of those ice cream flavors in my freezer, too. We like the peppermint with Trader Joe’s chocolate sauce and the egg nog with crumbled gingersnaps on top. Yum.

I”ll have to get the husband some peppermint ice cream (it’s his favorite) to replace the vanilla he drunkenly put in the fridge last night. 😉
At first I thought the steamed rutabaga was mango chunks! Glad you are back home and enjoying all the comforts it comes with 🙂

i discovered the SLOW CHURNED LIGHT eggnog last week. I think last year I only ever saw the full-fat version. I promptly bought 3 containers of it. 🙂 I have 1.5 containers left. 🙂

Mmmmm that peppermint ice cream looks yummy! Not so much on the Eggnog one.. bleh, not a fan of eggnog.
In Canada our big chain of grocery stores has its own brand and they sell an ice cream with candy cane pieces and chocolate chunks… it’s SOOO good. 🙂

My mama and I just had a phone convo about how clutch peppermint ice cream is now! She and I plan on splitting a celebratory gallon when I come home from finals!
I haven’t tried the peppermint Edy’s yet but my roommate got the egg nog one and I tried a spoonful. It was really good!

I always get home sick when I’m away, I don’t even like to sleep away from my house for one night – it’s just not the same.

both of those ice cream flavors look amazing! i will definitely be trying them out if i ever warm up from my run this morning….coldest run ever! with the wind chill in st louis, it was 3 degrees….my hair froze to my hat!!
