    Your eggplant looks tasty. I can’t really tell a difference between Ecto and what you were using before.

    Love oven fries! I eat them at least once a week. So good with lots of hot sauce and ketchup!

    Your dinner looks super! Sometimes I think big oven baked fries are so much better than the skinny fries that restaurants pile on plates. πŸ™‚

    I have never tried a Vitatop looks like a yummy way to end the day! Fries are dangerous once you start you can’t stop! How is marathon training going?

    I was craving fries all day too! Your mock lasagna looks great, I love eggplant. I would probably keep it in the oven another 10-15minutes though, I cook the hell out of things.
