Breakfast for a Queen

It’s Wednesday! But, for me its actually Thursday. I <3 short weeks!

Unfortunately the weather is starting to warm back up which meant this morning’s run was the last semi-cool one for a while. Rumor has it we are going to creep back up to the high 80s before the week is over. Boooo….

It was in the high 60s when I set out this morning and I enjoyed every minute of it.

I did my easy 3 miles and then 6×100 strides.

For breakfast I made a feast fit for a king…errr queen. πŸ˜‰


Sliced Honeycrisp Apple and a Yogurt/Almond Butter Dip.


The dip was good, but next time I would use vanilla instead of plain or add a little sweetener to it.


Egg in a Basket


I’ll admit it – I’m hooked! This is so easy to make and is really good. Its the perfect breakfast component.

This breakfast was great! It was full of volume, took me a while to eat and filled me up. Plus, it tasted great!

Now, I must get back to the daily grind! Have a great day!

I love eggs in a basket too although I grew up calling it toad in the hole! My grandfather always made it for me when visiing πŸ™‚ now my husband does and he has adopted the toad in the hole name!

i used to eat eggs in a basket all the time- it’s way good with some maple syrup drizzled on top πŸ˜€
love that you took little maddie to the petsmart event- if i were in town, i’d totally take bella and vs. i love stuff like that more than they do

This is great, I’ve been needing ideas and experimenting with new breakfasts, just to see what works for me and what I like, so it’s always good to see what other people eat! πŸ™‚

If you like eggs in a basket, you’d love beans on toast. Just throw some kidney beans over two slices of yummy bread. So good!

I always called it Birds in a Nest (which is kind of horrible now that I think about it.) Looks good. I may have to make yogurt dip for my next apple. Mmmm.

I’m so glad you also call it an egg in a basket! I’ve been eating them ever since i was little and it drives me crazy when i hear them being called by other names haha. They are addictive πŸ™‚ i think i’m going to have one when i’m done emptying out my google reader. That dip sounds really good. I don’t like eating apples by themselves so i’ll have to try that! (we have like 4 apple trees in our backyard so i really should learn how to eat them in a form that isn’t cooked like… apple pie or apple crisp πŸ™‚ they are really good in cooked in oatmeal as well πŸ™‚ haha)

I gotta try egg in a basket! It looks so fun πŸ™‚ On the almond butter/yogurt combo – I did something similar with ricotta cheese and almond butter, and it was soooo good!
