My Monday Frown Turned Upside Down

For a day that began so blah, it ended rather wonderfully. I think working on my couch in the AC had a lot to do with it. πŸ˜‰

I managed to take a break from my couch/ desk to enjoy my afternoon snack in the open air of my balcony.


I had a Peach Chobani with 3 tablespoons of granola sprinkled on top.


After I finished working I managed to take Maddie for a walk around the park and clean my apartment – I felt so productive!

Dinner was simple and literally took 15 minute to put together.


I heated up a frozen Salmon Burger Patty on the stove top with a little Apricot Dressing. The dressing gave the salmon a nice touch.


I topped the salmon with Spinach, Tomato and a Whole Wheat Arnold’s thin.


But, really the whole meal revolved around my desire for Okra Fries for dinner.


I tossed the whole okra with salt and pepper before baking them at 420 for 10 minutes. I dipped the finished fries in ketchup and relished just how tasty they are.

Please don’t be surprised to see a repeat of last night’s dessert. In fact, don’t be surprised to see this dessert every night until I run out. πŸ˜‰


Pumpkin Ice Cream + Teddy Graham Bears = Holy Yum!


Apparently my office building’s AC is suppose to be up and running again tomorrow. Everyone cross your fingers for me!

Funny how you’re hoping for some AC, and I’m hoping for our heat to kick in soon…. you can see why I’m so psyched to do a half in Florida in the middle of winter!!

That salmon burger looks so good! I used to devour them when I had a freezer. Unfortunately I don’t know the freezer here at school would keep my fish frozen πŸ™

I LOVEEEE thos arnold sandwich thins. They are so perfect for sammys. My latest addiction using them is sliced banana, pb, cinnamon sugar, and pb. Have a great day tomorrow girly!!

I had a salmon burger the other night. They really are wonderful! I paired mine with roasted butternut squash and carrots. Mmmm!

What a FAB looking dinner! I’m SO jealous of all you southerners & your okra fries! I’m dying to try them, but you have no idea how hard it is to find fresh, whole okra in Northern Michigan!

Maddie is a heart melter! Such a cutie.

I LOVE that ice cream. My freezer drawer (I have 2 roommates) is too full to store one, but I have one in my boyfriend’s refrigerator AND my parents refrigerator for when I need my pumpkin fix. YUM.
