For a day that began so blah, it ended rather wonderfully. I think working on my couch in the AC had a lot to do with it. 😉
I managed to take a break from my couch/ desk to enjoy my afternoon snack in the open air of my balcony.
I had a Peach Chobani with 3 tablespoons of granola sprinkled on top.
After I finished working I managed to take Maddie for a walk around the park and clean my apartment – I felt so productive!
Dinner was simple and literally took 15 minute to put together.
I heated up a frozen Salmon Burger Patty on the stove top with a little Apricot Dressing. The dressing gave the salmon a nice touch.
I topped the salmon with Spinach, Tomato and a Whole Wheat Arnold’s thin.
But, really the whole meal revolved around my desire for Okra Fries for dinner.
I tossed the whole okra with salt and pepper before baking them at 420 for 10 minutes. I dipped the finished fries in ketchup and relished just how tasty they are.
Please don’t be surprised to see a repeat of last night’s dessert. In fact, don’t be surprised to see this dessert every night until I run out. 😉
Pumpkin Ice Cream + Teddy Graham Bears = Holy Yum!
Apparently my office building’s AC is suppose to be up and running again tomorrow. Everyone cross your fingers for me!
