Cookie Monster

When I was rummaging through my cabinet this morning I discovered this lovely package of cookies I received at the Village Health Store anniversary event the other weekend. I threw it in my bag and pulled it out around 10:00 for my snack.


These cookies claimed to be cinnamon but I swear they tasted like ginger snaps.


The first couple were good, but then the spicy cinnamon (ginger?) flavoring got to be too much. Too spicy for my taste. They were fun to try, but not something I would not purchase on my own.

That’s the fun thing about samples. You find stuff you like and you find stuff you don’t.

Last night while I was packaging up the left over tofu I didn’t bake at dinner, I decided to save myself a little time and go ahead and make lunch for today. Sometimes making lunch the night before can be such a time saver!

In some tupperware I combined:

  • 1/3 block cubed tofu
  • 1/2 container Plain Chobani
  • Fresh Parsley
  • Garlic Salt
  • Squirt Spicy Mustard
  • Squirt Honey Mustard
  • 6 Grapes, halved
  • Tomato

I kept it in the fridge over night and this morning I filled 1/2 a Whole Wheat Pita with some Baby Spinach and the Tofu Salad Mix.


I’ll admit the seasonings were lacking a little bit on this one, but besides that my ‘mock chicken salad’ was pretty tasty.

With the pita I had a Carrot and some Okra with hummus for dipping.


I think I prefer to dip okra in ketchup. 😉

All together.


Alright, time to get back to work!

making lunch the night before is such a time saver! I try to do that as often as possible.

i’ve got to find me some fresh okra – I looked at the farmer’s market this weekend, but one place only had like 3 pieces left. I guess I have to go earlier 🙂

Lunch looks yummy! I wish I could eat tofu but I’m slightly allergic to soy…

I always try do prep lunch at the same time as dinner — it’s a huge time saver. I always do it with salad, if i’m making one i might as well make two 🙂

I don’t like spicy (cinnamon or ginger) stuff either. Well sometimes I like it but it can definitely be too intense for me.

I have been looking for okra everywhere since seeing it on your blog! no luck yet! 🙁

Tofu salad? FANTASIC idea…I have some leftover baked tofu (or will after tonight ) that would be perfect in that. Oh, and you have convinced me to try Okra. I have a bunch in my fridge right now. I am excited about it!

I love making mock salads with tofu. Mock Egg salad is one of my favorites 🙂

i am NOT a fan of ginger spice in cookies … way too overpowering – no me gusta.

now that PITA on the other hand, well i have a feeling i’d love that 🙂 looks amazing, Meghann!

your pita sandwich looks so amazing, i seriously need to try tofu again. i havent had it in years, and the first time i had it i didnt like it, but i’m thinking my taste buds have matured! haha or so i hope! 🙂

oooo… that lunch is such a great idea!! i’m always preoccupied with making crazy salads that i seem to forget how much better they taste inside a pita! good call.
