A Very Busy Bee

Wow! What a busy morning! I love it when I’m busy at work and the morning just flies by.

Remember when I was polling on a location for my work function next spring? Well I am happy to say we selected New Orleans for our 2010 event! I have never been and can not wait!

Of course that means its time to start cracking down and finally planning the event. This is when all the fun begins. 🙂

With my busy morning I managed to scarf down a mini Cashew Cookie Larabar sometime around 10:00.


This was gone in two bites and it was back to crunching away on the computer.

I was more then happy to break free for lunch. I was starving!


Lunch consisted of a mish mosh of left overs.

Starting with last night’s Gazpacho soup which I topped with Walnuts, Peppers & Onions.


Next up Tuesday night’s Red Beet Risotto.


And finally the last of my Sunday night Yucca fries.


I’m pretty sure that cleans my fridge of any and all left overs. I feel like I get a fresh start whenever I have that accomplishment. 🙂

I had a chocolate craving when I finished lunch so I dug out a Merci Dark Chocolate from my stash.


Mmm…. just what I needed. 🙂

Love the yucca fries! I have to try that ASAP! Cashew cookie is my fav larabar! It is so simple and delicious! Must forget about them for now though! 🙂 Parasites really like dried fruit!

I feel the same way about using up leftovers – I love to make big batches of stuff so I have food around,but then I start getting antsy to cook new things but I can’t justify doing so until I rid my fridge of leftovers. It’s almost as good as crossing things off my to-do-list! 😉

I also had leftovers for lunch (and for dinner last night…) Cleaning out the fridge and doing laundry always give me a big feeling of accomplishment!

I’ve never been to New Orleans either! It’s on my must-do list before leaving Tally. The risooto still looks delicious!

I love the leftover lunch/dinners. So many different options from the rest of the week and you know it is something you’ll like since you just had it a few days ago. Tonight is left over night for my family and I’m looking forward to it.

I love NOLA. I spent a month their last summer – the restaurants are fantastic (once you figure out how to order items that aren’t swimming in butter!)

I love eating leftovers cuz I feel the flavors really meld and are sometimes tastier the next day or two. However, after 2 days or so of sitting in my fridge, if I haven’t yet eaten it, I am often scared that the foods has gone bad. How long do you normally allow leftovers to sit in your fridge if you haven’t eaten them yet before you decide it is time ti chuck them?!

Im definitely a salty and sweet girl. Mixed is way better than one over the other
