Summer Nights with Rascal Flatts

Last night was awesome.


I drank, I sang, I hung out with great friends and I felt like a college student all over again. Rascal Flatts rock!

Originally we had plans to do some good old fashion southern tail gating before the concert, but after a quick recount we discovered there was actually only 4 of us and decided a nice early dinner seemed more appropriate.


Derek and I met Jenna, Erin, Erin’s boyfriend and surprise guest Anne for dinner at the Wine Exchange.

We got pretty lucky with the weather today. The afternoon thunderstorms that appeared disappeared quickly and we were able to eat outside on the patio under perfect blue skies.

As expected the wine menu at the Wine Exchange was quite impressive. They had any and everything you could be craving.


However, I was in the country spirit gearing up for the concert and only had beer on my mind.


I ordered a DogFish Head IPA, which ended up being perfect. It was just what I was craving. ๐Ÿ™‚


I loved the bounty of bread they promptly served the table.


I enjoyed a small piece x2.


The menu for food was just as impressive as the wine list. Each dish sounded very tasty, with an upscale unique spin to it. I was really wanting a salad so I ordered the Fresca fresh mozzarella, diced tomato, pine nuts & black olives over greens with herb vinaigrette on the side. I added Scallops to the dish as well.


Jenna had warned us before we ordered that the salads were small, so I was expecting a dinky little salad. Turns out Jenna was wrong or our view of size are totally out of sync. This salad was huge!


I could only eat half of the salad, but managed to eat all the Scallops.:)


Of course the salad was amazing. The concept of fresh mozzarella and tomato is very refreshing and complimented the beer I drank with my meal. I felt very summery eating this meal outside. Everything else everyone ordered looked great too.

I brought a doggie bag home with me and I’m thinking it will make a great lunch tomorrow.


After dinner we continued our classy concert pre-gaming with white wine and plastic cups. ๐Ÿ™‚


I had a small cup.


Erin’s boyfriend was great and drove us to the concert and picked us up. We ended up not having to worry about parking, traffic or drinking and driving. We were dropped off across the street and simply made our way to see Rascal Flatts.



The concert was packed! We had seats on the lawn and were lucky to find some semi-decent ones in the middle.



People watching at concerts of any kind – especially country concerts – is so much fun. I saw plenty of shirtless men and girls in cut off shorts with cowboy boots. I saw plenty of flip flops with not a regular ole tennis shoe in sight. I also saw a lot of camo wear, cowboy hats and wranglers. It was as if I was in Tallahassee all over again. Of course that’s just the fun in going to any event. The best part is getting to get dressed up too.

I love any excuse to wear my own cowgirl boots. ๐Ÿ™‚


All three of us had the same idea.


I just wish I had my cowgirl hat. I was sad when I realized the hat was at my parent’s house.

Derius Rucker was Rascal Flatts opener and I have to say he rocked on his own! Derius is the former lead singer of Hootie & the Blowfish and I was pleasantly surprised that he broke out some ole Hootie songs as well.


When Rascal Flatts made their way to the stage everyone shot up to their feet and just danced the night away.



I belted out every song along with them and made a complete fool of myself. It was too much fun. I always forget how much I really enjoy going to concerts. I used to get tickets to every concert possible in college, but haven’t been to one since. Kenny Chesney is coming in a couple of weeks, but I sadly have other plans. ๐Ÿ™

The concert ended with Rascal Flatts pulling TIm Tebow on stage, which we all found entertaining. It was very random and I saw a lot of my fellow Seminoles raising their tomahawks in the air.

I was beat by the time we got back and I immediately passed out when we made it back home.

This morning I slept in a little before completing level 2 of the 30 Day Shred.

Food at Derek’s place is slim pickins’ so we just reworked the same ingredients from yesterday’s breakfast.


Instead of dipping the cinnamon raisin bread in egg and creating french toast as I did yesterday, I just cooked the egg separate and made an egg sandwich.


I also finished off the fruit bowl Derek had bought for the weekend.


Between the two of us we knocked out 2 lbs of fruit in 2 days. We really like our fruit.

I guess its time to get motivated and ready for my day. Is it the last day of the weekend already? Better make the most of it!

Mmm, scallops in Florida! So jealous. I wish we had seafood in the middle of the country. Boooo! Sounds like a fun night!

I’ve lived in Music City for ten years now and STILL don’t own a pair of cowboy boots… pretty ironic, huh? Yours are adorable!

That salad looks so good and I definitely agree, it’s HUGE!! I got through lbs of fruit quickly too!! I’ve been known to eat three or four cartons of blueberries in one week!

Did you have to leave your leftovers in the car for the concert? Because if you weren’t able to get them into the fridge, you may not want to risk eating them.

What a fabulous night! Rascal Flatts was in Chicago last weekend and I so wish I could have gone. You ladies look like you had a great time and I love the boots ๐Ÿ™‚ I don’t have ANY boots! Unless you count clunky winter ones, of course – I need to get on fixing that problem!!

I love people watching at concerts too! And lawn seats are so much fun… I’m excited to see U2 at Soldier Field this September which will be great but I love the chill vibe of the lawn concerts ๐Ÿ™‚

AHHHHHH I am BEYOND jealous! I want to go to their concert so badly, but the only one over here in CA is a “special” type of seating and the tickets are $140!! Looks like it was an awesome time! Country concerts are awesome ๐Ÿ™‚
