Hunger Inspires the Best Meals

In the spirit of eating down my bar stash I stumbled upon a bar I almost forgot existed.


Do you remember the Jamkrafas rage of last November? I do. I also remember when Abbie ate my free samples. Luckily Megan was lovely enough to send me more, which I apparently forgot about. Ooopppsss…

I’ve had the chocolate flavor one before and I recall it being tasty, but not very filling. The same was true this time. I ate this baby around 3:30 and was already starting to hear my tummy grumble when I left work 2 hours later. I ignored it though and was able to take Abbie to the park for approximately 30 minutes before I just could not take it anymore.

On my drive home I quickly planned this amazing meal in my head. Its amazing how super hunger will inspire some of the best meals. ๐Ÿ™‚


This was a meal made up of 5 different elements that I layered one on top of another on my favorite star plate.

  • Layer 1 – Steamed Kale drizzled with balsamic vinegar
  • Layer 2 – Jicama
  • Layer 3Left over Grilled Eggplant, Zucchini, & Yellow Squash that had marinated in balsamic vinegar
  • Layer 4 – Grilled Organic Sun Dried Tomato Chicken Sausage
  • Layer 5 – Sprinkle of shredded Parmesan Cheese

Can we say Holy Yum?


After being in the fridge overnight the veggies really had a chance to soak up the balsamic flavors. The chicken sausage added a great hearty flavor to the overall dish, it added a little savory to balance out the sweetness of the veggies.


The best part was since this meal was mostly repurposing left overs, this whole meal took 10 minutes to throw together. The most effort I had to put into it was steaming the kale and grilling the sausage in the George Foreman. ๐Ÿ˜‰

Did you know today is National Vanilla Ice Cream Day? Sounds like a great day to celebrate to me!

I celebrated with a makeshift Hot Brownie Sundae.


I heated up a Vitalicous Vita Brownie and topped it with a spoonful of Vanilla Ice Cream. Nom Nom Nom

Now I’m off to pack and get to bed super early so I can get a killer run in the morning. ๐Ÿ™‚

I’m a little bummed because I just did laundry and realized one of my brand new running shirts is missing. What makes it worse is I only got to wear it once. *sniff*sniff

Do you ever just have clothes randomly disappear on you?

YES!! I swear that my dryer leads to another dimension, and that’s where a lot of my missing clothes are located, haha ๐Ÿ˜€

Yes but for me it is usually the case of the non-returning sister.

Although I do have two pairs of missing socks, I like funky, bright, rainbow socks that my sister would never be caught dead in, so who knows what happened to those.

Yes it’s ridiculous!!! I have lost way more than just socks – including shirts and even pairs of jeans!!!! So mysterious….

nice makeshift sundae! I had no idea today was national vanilla ice cream day! I have none in the house to honor the occasion! ;( I guess I’ll have to make up for it this weekend… ๐Ÿ˜‰

I lose all sorts of clothes. I just bought a ton of new socks like 2 months ago, and already can’t find a matching pair. And I got in a huff because I couldn’t find my green shorts this morning, either.

i lost this really cute shirt that i got at old navy, couldnt find it for a month! It was like stuck way behind some hung up clothes…..hope u find ur shirt

Haha, Kelly comment is funny and makes a lot more sense. Dryers DO eat socks, but I don’t know about shirts! ๐Ÿ™‚

I don’t really lose stuff from my dryer. But the one article of clothing I lost was very sentimental, it was a DC shoes hoodie – very well worn in ๐Ÿ™‚ and I must have lost it at the gym!!! booo ๐Ÿ™ hubby gave it to me the first year we started dating as a holiday gift ๐Ÿ™ poop!

Yes! I am missing 2 cute shirts that I like alot. I don’t know where they dissapeared too! Unless I mistook my trash for my hamper and threw them away…?

Yum ice cream sundae! I need to get more of those Vita-brownies asap. I totally lose socks, it’s so weird like the washer/dryer ate them up!

When I used public machine I frequently “lost” items. Now that I have my own washer/dryer the only thing that goes missing is socks.

I ALWAYS lose my laundry! I think my dryer is a black hole.
