Cold Lunch

With how dead my office is today I thought the day would just drag on and on, but to my surprise I have been very productive and am only an hour away of being able to walk out the door. Yippee!

Mid-Morning I happily crunched on some Trader Joe Peanut Butter Pretzels while some co-workers and I discussed past cruise experiences.


One of my co-workers is actually going on the same cruise as me on Monday. As I’m stepping off the boat, she will be stepping on! 🙂

I went home for lunch and cleaned out all the left overs in my fridge to a big bowl of yumminess.


I had the last of my Jicama Rice Salad….


… the last of my Roasted Vegetables….


… I finally managed the finish off the Cantaloupe that I have been eating through for almost 2 weeks now!….


…. and the last half of the amazing Italian Pitas from Greenwise.


I ate the whole meal cold and loved it. Cold leftovers rock!

I can’t believe I’m almost on vacation again! I just hope the weather clears up a little. The dark clouds and thunder is scaring me just a bit.

Leftovers always seem to be the most satisfying – the flavors of the dish have had proper time to fuse and really taste delicious!!

Yeah, the weather is awful here too – hope the sun comes out soon for ya!!

My office is the same today – everyone is itching for the 5:00 to hit (and rumors that we may close early!).

Have a great vacation! Never having been on a cruise before, the recaps of those vacays always intrigue me 🙂 Isn’t it such a great feeling to finish off all of those leftovers?!

I love leftovers too, but girl I don’t know how you have eaten that ‘loupe for TWO weeks…I just get sick of the same flavors pretty quickly I guess.

Leftovers are the greatest, especially when you can eat them cold! I tried jicama for the first time today, I’ll have to try it your way!
