I was knee deep into Eclipse when I went to bed last night and when I woke up this morning I just wanted to keep reading it. To fill my needs I engrossed myself in Eclipse while pumping out 20 minutes on the elliptical.
I then came back to my apartment and tried Bobbiβs Mini Living Room Boot Camp Work Out. Talk about work. I think that girl was trying to kill me with all those push ups! Iβm going to have sore arms tomorrow. π
To recover and cool myself down I made a Green Monster.
My monster was an extra dark swampy green this morning.
I had
- Spinach
- Strawberries
- Unsweetened Applesauce
- Ice
- Unsweetened Vanilla Almond Milk
This was my first experience with the vanilla almond milk and I was surprised how off the vanilla made the smoothie taste. I think next time I would try the regular plain version.
On the side I had a piece of Rye Toast with Naturally Nuttyβs Toffee Butter Peanut Butter.
I ate it very slowly to savor every bite of the delish nut butter!
The smoothie did a great job cooling me now. Iβm actually freezing for the first time all week. Mental note β make more smoothies during the heat of summer!
Meghann, I’m so impressed you’re so energetic in the mornings! How do you get up so early? Is it something that came easily, or did you adjust to early starts over time?

I’ve been digging that same breakfast lately…smoothie with a side of nut butter and toast. I don’t think just a smoothie would fill me up π even the huge smoothies my guy whips up for me

I have been drinking a lot of smoothies this summer as well. They taste great after a hot run!
Your bread looks delicious. Yum! I actually had the same issue this morning when I woke up. I wanted to read! So, I took my book to the gym. Normally I don’t like to read while working out, but once in a while’s ok, I guess.

I usually prefer vanilla soy milk over plain, but I have only tried the unsweetened vanilla almond milk – is there a particular brand you like? I’m trying to decide if I want to stick with soy or try to do AM more since the jury seems to be still out about soy product!
I love the naturally nutty butters, and butter toffee is the best. Yum!

I use the sweetened vanilla AM in my GM’s and they are pretty darn tasty, if you don’t mind a few more cals and carbs-which I don’t! ha.
I’m pretty bummed I’m not going to make it to the summit this year—-I say this year, since I’m betting it’s going to be a huge sucess and hope that it can be organized again in the years to come! π
So bummed that I cannot attend the summit π
