If I were to describe my dream job it would have to involve Food, Writing, Eating, and Health.

Yes, I know I just described my blog as my dream job and if I could just get a few more thousand daily readers trust me I would 100% live off of this baby. But, sadly that is not the case.

Recently, however, I had the chance to conduct a phone interview with someone who truly has my dream job. Anne Cain, a Senior Food Editor for MyRecipes.com, is a registered dietician who spends her days sifting through the 35,000 recipes the website holds creating fresh, new content by categorizing and digging up recipes that are new again.


Anne took the time from her busy schedule to explain to me what MyRecipes.com is all about and how they keep healthy living in mind.

MyRecipes.com is a recipe collection site that features thousand of recipes from their MyRecipes Network divisions, including the popular magazings Real Simple, Cooking Light, Southern Living, etc. Each division has its own dietician that checks all nutritional stats for each recipe and will over see the tagging of gluten-free, vegetarian, meat free, etc.

What I find most interesting about Anne’s job is the creativity involved with creating new content using the recipes on site. I happen to be on the MyRecipes.com mailing list and receive fresh new recipe ideas in my mail box every day. Those recipe ideas can come in the form of different categories such as their Seven Ways With…. Dinner Tonight….. 5 Ingredient Recipes…. etc. Anne’s job is to pair together recipes from the site to create these collections of recipes.

Anne believes the first step to cooking something healthy is to make sure your pantry is stocked full of healthy things that make for quick and easy meals such as whole wheat pasta, canned beans, and frozen vegetables. She states that MyRecipes.com is constantly striving to address people who are busy, so they don’t divert to fast food. The Quick & Easy Channel, 15 Minute Recipes, and Dinner Tonight are just a few of the efforts MyRecipes.com is taking to help those in a hurry. Proper freezing instructions can also be found online to help show how to store and package easy freezer meals.

Thank you so much Anne for informing me of all the great things going on at MyRecipes.com! It truly is a great resource site for easy, healthy meals and I am constantly searching for ideas of something new and fun to try.

Actually I have MyRecipes.com to thank for my dinner tonight.


After purchasing an eggplant at Publix this weekend, I had ideas of Eggplant Parmesean or just roasting it in the over, but after talking to Anne I decided to simply search eggplant and see what I got. Well, I got over 1000 different ideas of what to do with this lovely vegetable. Everything looked so good, I actually decided to split this eggplant into two separate ideas I got from the site.

For dinner tonight I went with Seafood Stuffed Eggplant.


The great thing about cooking from a recipe is your ability to make any changes you see fit. For this one I substitutes Scallops for the Shrimp and Tomato Sauce for the Beer.


The stuffed eggplant came out A-MA-ZING! I paired it with some Mary’s Gone Crackers for a nice crunch.

I realized it had been far too long since I had a nice bowl of Ice Cream so I dug into my freezer and decided to try the Coconut Ice Cream Turtle Mountain had sent me.


I had a 1/2 cup serving with a sprinkle of Chocolate is for Lovers Granola on top.


YUM! There was nice shreds of coconut interlaced through the ice cream. Another coconut milk ice cream winner. 🙂

At work this afternoon I had a serving of Yogurt Parfait Pie for my snack.


After staying in the fridge overnight, I believe the pie was even better today. I literally licked my container clean on this one. So glad, I still have 2 more servings left!

I also stole a mini Reeses from my supervisor’s chocolate stash.


Unfortunately the Reese was a little old and left a chalky taste in my mouth. Ewww…

Alright, time to try to watch the Gossip Girl season finale from last night. Can’t wait to see what all the fuss is about!
