Boy was I THIRSTY today!

I just kept chugging back water like there was no tomorrow. I must have drank a total of 4 or 5 liters all on my own. I guess I am still recovering from the dehydration I must have suffered during my run yesterday. My body keeps tell me I need hydration and I am just going to keep listening, not matter how many times I have made a visit to the little girl’s room in the process. ๐Ÿ˜‰

After a day full of great eats, I wasn’t even thinking about dinner when my Dad mentioned throwing something together around 7:00 this evening. He suggested Fajitas and since I was looking for something light this sounded perfect.


My Sis and I had Veggie Fajitas while the rest of the Family dug into the chicken version. It’s great having my sister living at home because she made sure to stock my parent’s fridge up with lots of fresh yummy veggies.

For the fajitas I mixed up a quick seasoning mix of Cumin, Chili Powder, Black Pepper, Salt and Oregano. I then coated an array of Onions, Broccoli, Carrots, Yellow Squash, and Tomato with the quick seasoning and heated it all on the stove top.

I also combined some Onions and a can of Black Beans in the food processor for a quick and easy refried beans substitute.


For my fajita I started with a Whole Wheat Tortilla then added Black Bean Spread, Lettuce, Fajita Veggies, and a sprinkle of Cheese. It was wonderfully filling and delish – the perfect meal to end my day.

On the way back to my apartment I couldn’t resist a Peanut Butter Saltwater Taffy for the road.


Yes, this is my 3rd saltwater taffy of the day. I can’t help it, they are so good and a nice special treat!

I *love* the idea of pureeing black beans and onions! Just awesome. And I’m just trying to imagine what peanut butter taffy tastes like… ๐Ÿ™‚

Yum! Those fajitas look good and have given me an idea for dinner tomorrow – I know I’ve got some tortillas and veggies on hand. I think I’ll make my own version!

the fajitas look wonderful! I should blend some beans more often, since the refried bean smooth texture is what I always crave! and i have a bag of dried beans so that would be SO MUCH cheaper. hmmmm…
