Super Salad

by Meghann on April 30, 2009

I seriously just had the best salad ever for lunch.

I actually created it last night, while trying to empty my fridge of all my fresh produce before I high tail it out of town this weekend. I was drooling as I was making it in anticipation of consuming it today

The contents:

I also topped it with a tablespoon of this little baby.

It was heaven in a bowl! I really loved the addition of the Sausage and Cheese. The small amount of those components really made a difference. πŸ˜‰

I also sampled a new bag of FoodShouldTasteGood chips with some TJ’s Peach Salsa on the side.

This bag of chips was rather difficult to open.

When I was in Colorado a couple months back, I noticed some of the products at the air expanding problem associated with them. With our sea level stats here, you don’t see much of this in Florida.

The chips were really seedy, which is good because I like them that way. πŸ™‚

Somehow this Reeses Peanut Butter Egg ended up in my lunch bag as well this morning.

Caroline you are both evil and too kind to send me back to Florida with a handful of these. Reeses is definitely one of my favorite candies!

For my snack midmorning I had Peanut Butter Pretzel Crack.

11 nuggets per serving is simply not enough! Good thing I preportioned my snack this morning and my bag was way back at my apartment and out of reach. πŸ˜‰

I am very excited to leave work this afternoon and start the long trek up to Tallahassee to watch my Sister receive her diploma tomorrow evening! Only a few more hours until I get to see her beautiful face!

Mmmm sausage and cheese are rockstar additions to any salad! That dressing looks amazing – I’ve never seen that flavor! I bet it’s super light and refreshing πŸ™‚

I bought pb pretzels at WF and they are way too tasty-I could easily eat the entire bag!

It’s 2 wks. until I get to watch my sis graduate, too – can’t wait!

I love cheese on salads! Oh, and that ice cream stash would be dangerous at my house!

5 Diana (Soap & Chocolate) April 30, 2009 at 12:17 pm

Enjoy the graduation! I guess this means you won’t be joining me and Ashley for dinner Sunday night?

Your lunch looks like a fab bowl of chopped antipasto!

That dressing looks excellent! I always check out those dressings, but always end up passing because I figure it is mucho cheaper to make my own.

I tried FSTG The Works chips today for the first time. I really liked them. Espeically with spinach and artichoke hummus:)

13 Christy April 30, 2009 at 1:17 pm

I LOVE The Works chips the best! They taste like an everything bagel. I am so impressed of the restraint you show with those PB pretzels. I can’t keep them in the house! They definitely trigger the snacking monster in me! Hope you have a great time with your sister! Has anyone ever said that she looks like Caitlin??

14 Niki April 30, 2009 at 1:37 pm

Yummy salad!! Congrat to your sis and have fun at the graduation!!

15 Elina April 30, 2009 at 2:39 pm

Oh yeah, those pb pretzels are definitely like crack. I had them once at a party and I swear I ate 1/2 of a huge container all by myself. The evil person that brought those in and placed them directly in front of me didn’t know how much trouble he was getting me into πŸ˜‰ Preportioning is key with these.
Have fun at graduation! D:

Looks like a great salad! I’m always looking for ways to spruce up plain salads, and those are a couple great ideas. Enjoy your trip!

Have a great time seeing your sister!
How is that salad dressing? Does it taste like tzatziki sauce? I should probably made an immediate stop at the grocery store if it does.
