More Fun with Left Overs

For some reason the morning creeped by painfully slowly. I had work to do and that usually makes the time fly, but I felt like every time I checked the clock this morning only a couple of minutes passed instead of the anticipated 15 or 20. Grrr….

When mornings creep by like that I also find I need my mid-morning snack earlier, though I suspect it has something to do more with boredom then actual hunger.


The snack of the day this morning was a Pumpkin Pie Kashi Granola Bar.

I am so glad you guys have been enjoying my left over lunches, because I hate to say it but I got another one for you today. At least I am trying to be creative with my left overs! 😛


I started with the other cup of my Amy’s Low Sodium Tomato Bisque from Monday and added the left over Steamed Kale & Apples from last night right to the soup.


The Kale & Apple gave a little something extra to the soup that made it very enjoyable.

Next up was the other Zucchini Cake from last night.


I made a Zucchini Cake Burger using a Whole Wheat English Muffin as the bun then topping with Swiss Cheese, Spinach and some Country Bob’s All Purpose Sauce for a little kick.

It was a great lunch but I have this odd craving for french fries right now. Maybe it was the make shift burger that sparked the craving?

As a Friday treat I broke into my chocolate stash and had this ‘Twilight Delight.’


Speaking of Twilight… guess what’s coming out on DVD tomorrow… eekk!!! 🙂


I would also like to point out that I received this e-mail in my inbox this morning at 10am.

Good morning

The executive team approved a pizza lunch for all employees today!  The pizza will be delivered around 12pm. 

See you then!

I debated throwing my lunch plans to the wind and enjoying my favorite food of them all.. pizza. But then I discovered it was Pizza Hut… YUCK… and all my pizza dreams went out the window. Oh well.

yeah Pizza Hut just isnt “real” pizza to me…its alright, but not worth the calories! Love the leftovers!

yuck is right. I love pizza too, but when my company orders the crappy kind – there is no temptation there.

Your leftovers aren’t the typical boring leftovers, though – they’re fun!! They look good 🙂 Hope the afternoon goes by faster than the morning did!

That zucchini “burger” idea is awesome! I can’t wait to try that!!

Krispy Kreme, Chick Fil A, Pizza Hut… it’s sweet of your company to buy you guys lunch, but maybe they should start throwing in a salad, to help keep employee healthcare costs down 😉

Yeah Pizza Hut, Dominos, not worth it. Although Costco pizza or papa john’s is worth it in my pizza book 🙂

I can’t find those granola bars yet! They look so good.

Don’t even apologize about the leftovers, you completely change it up everytime by pretty much making a new meal!! I wish I was as creative as you!

Good call on the pizza. I hate to admit it though, but I actually have a soft spot for stuffed crust pizza from Pizza Hut. At least I only have it like once a year though.

I’ve had bad Pizza Hut experiences…burnt crust and super greasy cheese…your lunch looks a billion times tastier.
